GAPS Cooking Weekends 2026 - In-Person Training with Monica Corrado
Dear GAPS Community,
You are invited to join Monica Corrado, MA, CNC, CGP — The GAPS Chef™ — for a series of immersive, in-person training weekends this summer in Northern Colorado.
These three standalone (or progressive) weekend intensives are designed for practitioners, coaches, and serious home cooks who want to deepen their understanding of GAPS cooking techniques, or work toward certification in cooking education and advanced culinary application of GAPS principles.
GAPS Cooking Weekends 2026
Location: Fort Collins, Colorado (Fly into Denver International Airport)
Format: In-person, hands-on training
Schedule: Friday 12:00 PM – Sunday 6:00 PM (MT)
Participants may attend one, two, or all three weekends. Those attending all three may qualify to test for GAPS Certified Cook™ certification.
CGPs and CGCs are welcome for refresher training and advanced application.

Meat Stock & Lacto-Fermentation
Focus areas:
Meat stock fundamentals (ratios, cuts, collagen extraction, variations)
One-pot stocks, stews, casseroles, blended soups
Lacto-fermentation foundations (salt ratios, brining, vessels)
Vegetables, tonics, and brine applications
Weekend Two: July 10–12, 2026
Cultured Dairy, Nuts & Seeds
Focus areas:
Yogurt, kefir, sour cream, kefir cream, cultured butter, ghee
Dairy culturing methods and troubleshooting
Nuts, seeds, legumes: soaking, sprouting, fermenting
Fermented baking applications
Weekend Three: August 7–9, 2026
Advanced GAPS Cooking: Organ Meats, Fats & Fermentation
Focus areas:
Organ meats: liver, pâtés, blends, preparation techniques
Rendering fats: lard, tallow, duck fat
Fermented meats and fermented beans
Advanced culinary integration of GAPS principles
Full Series Option (Save)

Participants completing all three weekends may be eligible to test for certification as a GAPS Certified Cook™, with additional pathways toward advanced teaching and industry credentials.

Snacking on GAPS does not have to be complicated. In fact, many of the foods already built into the GAPS Diet can easily double as simple, nourishing snacks. Think meat stock, slow-cooked proteins, and healthy animal fats that support digestion and help keep you satisfied between meals. When you shift your mindset away from typical “snack foods” and instead focus on nutrient-dense, easy-to-digest options, snacking becomes less about convenience and more about supporting your gut and overall health.
A few things to keep in mind while snacking on GAPS:
✅Prioritizing healthy fats can help stabilize blood sugar and support steady energy throughout the day.
✅Animal proteins and fats provide the building blocks your body needs for repair and healing.
✅Be mindful of proper GAPS cooking and preparation techniques, like soaking and fermenting foods, especially nuts, seeds, legumes, and dairy, so they are easier to digest and better absorbed.
Keeping these at the center of your snacks can make a meaningful difference in how you feel.

For thousands of years, humans thrived on simple, whole foods. Meat, eggs, vegetables, fruits, properly prepared grains—foods you recognize. Now, so much of what fills our carts is ultra-processed and far removed from anything natural.

Have you heard people say that touching receipts is bad? What’s the big deal, you might wonder.
Most thermal paper receipts are coated with chemicals like BPA or BPS, which are used to help the ink appear when heat is applied. The problem is that these chemicals are endocrine disruptors, meaning they can interfere with your hormones. Unlike chemicals sealed inside plastic, the coating on receipts can easily transfer to your skin when you handle them—especially if your hands are warm, sweaty, or have lotion on them.
Research has shown that these chemicals can absorb through the skin and enter the bloodstream. Over time, repeated exposure may contribute to hormone imbalance, fertility issues, and other health concerns.
It’s a small everyday exposure most people never think about. Simple habits like declining receipts, washing your hands after handling them, or choosing digital receipts can help reduce that exposure.
Sometimes the little things we interact with every day matter more than we realize.
