In this class, we will look at the essential components that go into vineyard planning and management. These include economic considerations, site evaluation, varietal selection, rootstock choices, vineyard design, labor requirements, and mechanization. Lucie Morton has followed the evolution of winegrowing in her home state of Virginia since the 1970s and can clearly show and explain what are the keys to successful vineyards. As a general viticulturist, she will outline the challenges of grape growing here in a holistic way whereby she shows how each decision affects the entirety of the operation and its chances for success.

Harvesting is peak season in the wine industry. Join your instructor, Julien Durantie, vineyard manager at DuCard Vineyards, on a journey with the grapes from the vineyard to the winery. Participants in this hands-on class will be involved in one or more of the 8-10 DuCard harvests this fall, including staging, picking and transporting the grapes, destemming reds, crushing whites/rose plus assessing ripeness in the vineyard and in the lab. We will also discuss and review alternative methods and equipment choices. Specific class dates and times will be determined based on weather and grape conditions, beginning late August and through late October, and all class members will provide their day-by-day availability for DuCard to assemble small teams for each harvest. This class will provide a broad range of insight on how to conduct harvests and process fruit in a practical and effective way.

Vineyard Spraying
To grow healthy ripe fruit, free of disease, a working knowledge of chemical spraying is essential. In this class we will discuss fungicides, pesticides and herbicides and how their applications can benefit or cause damage to a vineyard if not properly applied. We will cover the basics of why a rotational spray program is critical and how to practically and safely apply them. Additional topics include herbicide ground sprays, tank mixing, tractor calibration and spray unit and foliar nutrient applications.

Study the fundamentals of bartending while learning to make popular drinks both quickly and efficiently. Gain working knowledge of bar operation and mixology, and find out how all of your favorites are both served and produced. Upon completion of the class, all students receive a certificate in mixology and will have the knowledge, professionalism and hands-on training needed to feel comfortable working behind any bar.

Basic Horticulture & Landscape Design
This is a hybrid class. Classroom sessions are online. Field trips are face-to-face.
This class focuses on learning basic horticulture terminology, designing landscapes in residential and commercial settings, plants that are native or adaptable to zone 7 and sustainable landscaping. This is the perfect class for a home gardener, master gardener, master naturalist or sustainable landscaper. The class will include field trips to local landscapes/nurseries and invited guest speakers on various topics related to landscape design. Students will need to obtain drawing materials in order to learn how to draw out a landscape and perform a few exercises. A binder for keeping notes is highly encouraged. Classes will meet at PVCC unless there is a field trip destination.

Cupcakes have become very fashionable lately. Parents and kids will learn a new cupcake and icing recipe each day. From basic vanilla to yummy strawberry lemonade and chocolate peanut butter, we will cover it all. There will be plenty of cupcakes to share with friends and family. Who doesn’t love a cupcake?! This academy will cover basic food safety principles and safety in the kitchen, as well as basic food preparation.
