FRED FRED Overall Goal: Through engaging communities and participants with local, seasonal foods,increase awareness regarding food and nutrition.

FRED (Food Resource and Education Demonstration Project) was launched by the Health Division, School of Health, Physical Education and Leisure Services at the University of Northern Iowa and sponsored by the Wellmark Foundation, with the aim to promote healthy eating among high/need low resource areas of Black Hawk County, Iowa. For our first year, our student health educators and fun and personab

le Chefs organized 10 interactive events in which they brought a cooking cart to provide onsite community cooking demonstration while also delivered information about nutritious components of the used ingredients, gave recipes and allowed students to develop cooking skills and self-efficacy by participating in the dish preparation. Participants also had the opportunity to taste samples and explore new flavors. The FRED education events also focused on promoting local fresh produce, food safety and waste reduction as we used foods that were grown locally and taught the proper hands washing technique.

Specially to the Wellmark Foundation, the UNI College of Education, Iowa State University Extension and Food Corps.

On Wednesday October 29th, we partnered with Food Corps to deliver a healthy cooking demonstration at George Washington Carver Academy. We made a great fresh potatoe salad with greens that were harvested directly from the Greenhouse. Thanks to all of the participants, especially for the Food Corps staff who led this event, for joined us to develop cooking skills and eat local grown fresh veggies.

Walking Taco Challenge. It was a great event where we challenged kids to put as much nutrition in their bags as possible. It was a fun and creative strategy to promote healthy eating among children. The walking taco provided all kinds of nutrients, as they got a chips bag they were getting carbohydrates. Also, they put protein sources including beef, turkey, beans and garbanzo. They got a lot of fiber from the leguminous as well as from the chopped herbs and veggies. We used tomatoes, onions, cilantro, basil, red pepper, green pepper, cucumber, carrots and spices. Congratulations to all the participants for having that bunch of vitamins and also good fats from the great guacamole that we tasted.

Thank you for joined us at the Homecoming Brunch and helped us to support food sustainability. We tasted panini bites made with fresh local bread, organic local apples and local cheese.
