Cooking Italian with Joe Ciao! I’m Joe Borio. My parents ran an Italian restaurant in upstate New York. Now I live in Puglia, Italy 6 months a year. Join me! 🇮🇹🍝

I share weekly Italian recipes and videos that bring you the real taste and feel of Italian home cooking. Joe Borio was born on February 7th, 1965, the third of four children. The son of an avid food lover himself, his father, Joe, owned and operated a popular Italian restaurant in Central New York, Borio’s Restaurant. Borio’s Restaurant was originally opened by his grandfather Giuseppe and his gr

andmother Caroline after they arrived here from Italy. It was here working by his fathers side, as well as his grandmother Caroline, Joe fell in love with all things associated with Italian culture and food. Joe’s mother and the Toscano family were also fabulous cooks and bakers, where “Joey” as he was affectionately called by his family, was always found cooking at his mothers or grandpa Tony’s side. Always baking Italian cookies, rolling out homemade pasta, making sauce, pasta fagoli, lentil soup and while listening to great Italian music surrounded by the family. Due to his love for Italian culture and food, while wanting to connect further with his family, Joe Borio had a fantastic idea. In 2012, Joe Borio, with his sons started an olive oil business, producing their own olive oil, Vito and Joe’s Extra Virgin Italian Olive Oil. Borio bought a villa in Italy and now owns and operates an Organic Farm and Olive Grove in a small village on the shore of the Adriatic. Cooking, spending time with family, friends, and sharing recipes, as well as creating new dishes to enjoy, have become his passion and joy of life.

🎉 Very exciting news from the Cooking Italian With Joe family! 🎉
My son Vito just graduated from Florida Atlantic University with his Master’s degree — top of his class! 🎓
He’s now heading to Europe to pursue his PhD, focusing on human interaction and the implementation of artificial intelligence integrated with people. I’ll be spending time in Florence, Bologna, or Austria while he works out his program with several universities over here.
I couldn’t be prouder or more excited. We’re going to get some wonderful time together in Italy, and I know he’s going to do great things. As my father always said… leave the world better than you found it.
Proud of you, Vito. The best is still ahead! 🇮🇹❤️

🍝 Just pulled this off the stove and WOW — Pasta alla Norma done my way!
Crispy fried eggplant tossed with linguine in a fresh Pomodoro sauce loaded with shallots, garlic, Parmesan, salt, pepper, and plenty of basil. Simple ingredients, big Italian flavors. This one came out absolutely delicious!
I’m in the kitchen tasting it right now and I can’t stop smiling 😋

🎇 Fireworks exploding right above the Piazza in Vico Del Gargano! These were next-level — loud, brilliant, and absolutely magical!
Thousands of people, food pop-ups everywhere, music, laughter, and the whole village coming together. This is the Italy we love! 🇮🇹 Every year it’s a phenomenal experience.
Living in Italy means nights like this ❤️

❤️😊🇮🇹What an unforgettable evening at l’ Orto del Conte, in Vico Del Gargano, Puglia Italy 🇮🇹. Stepping through the ancient castle entrance into the stunning courtyard and garden felt like entering another world. The medieval windows framed the most breathtaking views of the hillside and village below — pure magic.
We started with chilled water and crisp Prosecco, followed by tender grilled octopus with balsamic and creamy Burrata cheese. Then beautiful sliced beef with Parmesan and balsamic over fresh greens. The slow-roasted beef over a bed of polenta was incredible, served alongside that heavenly locally baked ancient grain bread and the best extra-virgin olive oil. We finished with refreshing lemon sorbet while soaking in the beautiful music of Italy.
Owned by the wonderful Eduardo, this place is absolutely magnificent! 💕❤️

✨Help ME!!! Needing your advice! 🙋‍♂️Cooking Italian With Joe here in beautiful 🇮🇹 Vico Del Gargano, Italy! 🇮🇹
I’m reaching out for some real gardener wisdom. I’m trying to create a whole beautiful lavender section in my garden — aiming for one big, bushy lavender area that thrives in this Mediterranean sun.
So far, it’s been a battle:
• First round: Planted 6 lavender plants with very little water. They all died in about 2-3 weeks.
• Second round: Bought 6 more and gave them plenty of water this time. They looked great for those first 2-3 weeks, then almost overnight — gone. I’m pretty sure it was root rot.
• Now I’m on my third round of 6 plants from the nursery.
I’ve read online that lavender wants very little to no water after the first few days, and I’ve chatted with experts, but I’d love advice from you all who’ve succeeded with it here in Italy or similar climates.
What am I doing wrong? How should I plant these properly so they survive and grow into a big bush? Soil amendments, drainage tips, watering schedule, sun exposure — any and all advice welcome!

“Look who I met on my way to the dump! 😂 Driving my Polaris Ranger back through the hills when this big, friendly white steer with a heavy bell around his neck was just standing in the road listening to me talk! He had a couple buddies nearby too. Only in Italy… especially in our beautiful village of Vico Del Gargano in Puglia!
Beautiful day, crazy fun moments, and a lot of laughs. This is why we love it here! 🇮🇹🐂🛻
