Imagine a small Italian village in the Dolomites. A stone kitchen. A pot of farro soup bubbling on the stove. Bruschetta waiting on the counter. Angel food cake with fresh strawberries for when the day winds down.
That's the inspiration for the Week 6 of our Kid Chefs Summer Camp, and honestly it's one of our favorite themes this year πŸ…πŸ₯£

Kids will make Minestra di Farro, a hearty soup from the mountain regions that's full of vegetables and Italian herbs. They'll build a Duo of Bruschetta, choosing their own toppings and layering them on crispy, garlicky bread. And they'll make Risi e Bisi with shrimp, a classic creamy rice-and-pea dish that's pure comfort.

This week we cook slowly, taste often and talk about where food comes from. It's the kind of cooking that turns an ordinary Tuesday into a memory 😊

Northern Italy doesn't really do complicated. It does simple, done really well: garlic, olive oil, parmesan, fresh herbs, a little patience. And that's exactly what this week is about πŸ‹πŸ„πŸ₯¦

Kids will make Broccoli Parmesan that converts even the most skeptical vegetable eaters. A savory Garlic Mushroom Pie with a golden, herby crust. Chicken layered with fresh herbs and baked into a terrine. And for dessert, a Lemon Semolina Cake, bright, citrusy and moist in a way that makes you think about it days later.

We love this week because it shows kids that some of the most satisfying cooking comes from a short ingredient list and a little know-how. Those are skills worth having for life πŸ’―

Small plates. Big personality. For the fourth week, Kid Chefs Summer Camp will take a tour exploring the art of cooking in bites 🀀

❀️ The menu travels through Taiwan, Thailand and beyond: fluffy steamed Gua Bao stuffed with braised pork and pickled veggies. Thai beef salad with lime dressing so bright it wakes everything up. And Pineapple Cake, a buttery Taiwanese treat filled with sweet jam that kids absolutely fall in love with.

What's great about a tapas-style week is that kids get to taste a little of everything, and there's no such thing as too much. Curiosity is basically the whole assignment πŸ˜‰

Did you know? Few countries pack as much culinary variety into one border as Spain does πŸ‡ͺπŸ‡Έ

The north gives you Basque country, where pintxos line every bar counter and the seafood is almost unfairly good. Catalonia brings its own distinct traditions, bold with Mediterranean ingredients and techniques that feel nothing like what you'd find a few hours south. Drop down into Andalucia and suddenly everything is sun-drenched, lighter, cooked around olive oil and fresh produce and the kind of tapas that make you lose track of time.

It's a lot of ground to cover, and honestly, a lifetime isn't quite enough to eat through all of it. Amazing, right? If you've traveled to Spain, we'd love to know: which region's food has stayed with you the most? Tell us in the comments!

This is the most important part to know!
So what’s is all the hype about brisket??
Well it is Delicious, but why?

1. You’re Eating Melted Collagen

Brisket contains enormous amounts of collagen and that is what gives you that buttery mouthfeel that is irresistible.
Here you can see that I have browned the out side in beef tallow for the delicious Maillard reaction. That is crucial in any braised protein concoction!! Then for even more flavor I brown the mirepoix and add some chick pea miso paste , this will then be deglazed with Shaoxing
Then add some beef stock and a few other goodies,
Then the oven for 8 hours @ 250degrees !
Then this is very important and can’t stress it enough let it cool down in the braising liquid, to maintain maximum flavor!!
