January's Harvest of the Month is Winter Squash! Harsh winters make it difficult for vegetables to grow in Montana year-round, so squash are great winter nutrition boosters to include in meals. Winter squash is loaded with vitamins A and C and provide approximately the same amount of potassium as bananas. Vitamin A helps maintain good vision and keeps skin healthy. This month’s Montana Harvest of The Month is Apples! Did you know that no apple seed will produce the same variety as the apple it came from? That means that every apple seed will grow a tree that will produce a brand-new type of apple! The only way to grow the same variety is by taking a branch from one tree and attaching it to the roots of another apple tree; this process is called grafting. Brassicas are veggies that are related to mustard. We eat several different parts of each plant in this family. For example, when eating mustard we may grind the seeds to make mustard the condiment, or eat the leaves raw or cooked. When eating cauliflower or broccoli we are eating the flower of the plant.
