Variety pack of cupcakes--12 for $24. Strawberry with strawberry icing, chocolate with peanut butter frosting, vanilla with vanilla frosting and the "everything" cupcake that has a vanilla base with coconut, chocolate chips and pecans. All between 2 and 3 carbs per cupcake.

Rays in the kitchen with a couple new recipes. Up tonight, chocolate with chocolate icing. Can't wait to try them!

Ray is getting ready for a procedure tomorrow and has to be on a clear liquid diet. Getting him prepared and preventing him from starving has been my number one priority. I got him set with bone broth, whey protein isolate and Jello, to spice things up. You all know, we are ingredient SNOBS! Have you seen the nasty ingredients of Jello? So.... here's my recipe to clean it up!

Lemon Jello

4 tbls gelatin (Now Brand)
2 cups boiling water
1.5 cups confectioners sweetener
1 cup lemon juice (get the real stuff)
2 cups room temp water

Directions

Combine gelatin 2 cups water and confectioners and bring to a boil. Turn off heat and add lemon juice and room temp water. Place in large pan (I used My lasagna pan) and place in frig to harden. Makes 24 - 2in squares. Enjoy!

Prot 1.5 per square

Chicken wings and broccoli salad for dinner. Did you know that each wing yields about 1 ounce of meat?
Broccoli salad
6-2/3c servings

277 calories
2 net carbs
10 g protein
26g fat

1-4 cup bag of cleaned and chopped Broccoli, cut to bite size pieces
5 slices bacon browned and chopped
1 cup sharp cheddar cheese shredded
1/4 cup white onion chopped
Mix salad ingredients together and set aside.
Dressing
1/2 cup confectioners erythritol
1/2 cup primal mayo
1/4 cup vinegar
Whisk dressing ingredients together and toss with salad.
