Students, don’t forget temperatures greatly affect how quickly starter and bread proofs. These loaves were proofed at a winter 70 degrees house for 9 house after the first mix prior to them going into the fridge overnight for the cold proof. Summer time with warmer temps I can get away with 6 hours and get this kinda rise. Keep that in mind while you bake.
