Pasteurization in sake (火入れ, hi-ire) is all about balancing stability vs. freshness. Heating to ~60–65 °C deactivates enzymes and microbes, which prevents spoilage—but it also subtly changes aroma, texture, and flavor. The variations tweak when (or if) that heat is applied, and each one lands differently in the glass.
