Harvest Moon how beautiful you are 🍁🌕
The dawning of a new day with the moon still shining and birds chirping away. I had forgotten about the full moon last night so was very happy to see this beautiful sight. The Harvest Moon…a time to reflect, give gratitude, look to the future, think positive and to give up the old no longer needed thoughts or desires.

Bringing some joy into the world today 😍 whole wheat honey bread A recipe I received way back in the late ‘70’s. It’s a keeper as I like to say and if I am honest the best honey wheat bread I’ve ever had. House smells like Fall is just around the corner 🍁🐝

Tip Tuesday! Yes you CAN have a quick lunch or appetizer in no time Look at this delicious open faced beauty. Sliced French or baguette bread, topped with ricotta seasoned with a little s&p or herbs, topped with roasted cherry tomatoes and GOOD olive oil and maybe a chopping of dill or parsley. 🍅🌱🍅🌱

To roast the tomatoes place on lined rimmed baking tray drizzle olive oil and roast in hot oven or could use the broiler (but watch carefully) oven set at 425F roast to your liking about 15-20 minutes.

Need a dish that can turn from a side dish to a main course to a lunch dish? Or maybe a pasta sauce later in the week?

Introducing Melanzane alla Sardo or Stuffed Eggplant! posted his recipe a few years back and it’s a keeper!

The dish will become a best friend! Easy peasy and whips up in no time.

Eggplant cut in half, score the flesh and season with salt and brush all over with olive oil, turn over so flesh is down on a foil line tray.

Meantime chop garlic about 2 cloves or so along with parsley, cut cherry tomatoes a nice basket is good for two eggplants, in half and better to quarter, toss with salt , pepper, good olive oil and stir. Allow to sit for about 15 minutes so everything starts to get happy and the tomatoes release the juices.

Turn eggplants over , spoon and push into the flesh the mixture, use it all as the toms will cook down.

Place in 375 F oven till soft and nicely browned. About 40 minutes

These are lovely hot or at room temperature, sprinkle Parmigiana or Pecorino if you have some and enjoy!

Hopefully you’ll have leftovers 😊

Some passions never really leave you. ✨

It’s been awhile since I’ve spent a day with flour, waiting for dough to rise, and filling the house with the smell of fresh bread. During the pandemic, baking became so much more than a hobby, it became a way to bring comfort and joy to others.

Today I baked this beautiful ciabatta from a recipe generously shared by Germaine Razzi Zolotariof-Ricci , and it reminded me just how much I missed baking bread.

For now, I’m simply baking, learning and enjoying the process again. But I have a feeling this may be the beginning of something…
