Casi's Kitchen

I have been volunteering in the kitchen and serving the seniors lunch at Golden West Community this past summer (and will continue to do so for the foreseeable future). It has been such a joy to help bring food back to this community who lost their kitchen back in 2020. Seeing everyone gather to chat and eat a meal together melts my heart everytime I see it. They usually have to pay for these meals, and as low income seniors we don’t always get to see the over 250 seniors who live there. So this year, along with Head Chef Raul, we are determined to give them ALL a FREE Thanksgiving feast! With your help of course! Made my whatever-is-in-the-fridge version of the Roasted Chicken with Schmaltzy Cabbage and it was absolutely devine. Super easy, packed with flavor, and juicy amazingness. I will be making this one again! The best part of roasting a whole chicken for two, leftovers will be pulled for salads and fried eggs will be put over that insane cabbage tomorrow morning 🤤

After a little hiatus, the bestie and I were back to our FaceTime cooking dates! This time we made Hassel Back Salmon over an Asparagus and Cucumber Sriracha Aoili Salad. Delish! We also got to catch up on what we missed in each other's lives over our hiatus. I can't wait until September when we get to catch up in person doing a food tour in Aspen together!!
