day date in Newport, Rhode Island ⚓️🌊

started the day touring the Elms Mansion. I’ve only ever toured The Breakers so it was exciting to finally tour another mansion. We got lunch at The Carriage House which is right on the grounds. I loved my chicken salad on a croissant.

After, Brendan and I drove over to Bowens Wharf where are the shops and restaurants are to grab cookies from The Cookie Jar and do some exchanges at Lululemon.

these cottage cheese breakfast tacos are love at first bite seriously 🤌🏼🌮

crispy cottage cheese taco shells, pesto, runny eggs, fresh arugula, scallions, and sriracha all together is such an elite combo!!

easy high protein breakfast when you want something savory, filling, and different from the usual eggs on toast.

taco shell ingredients:
• 3 tbsp Good Culture low-fat cottage cheese
• 1 egg white
• salt, pepper, oregano, chili flakes

toppings:
• 2 eggs
• 2 tbsp pesto
• arugula
• chopped chives
• sriracha

Mix cottage cheese and an egg white together, season it up, and spread into two taco shells on parchment paper.

place the baking sheet in the oven or air fryer and bake for 25-35 minutes. your tacos should look similar to the video when finished, cooking times will vary depending on which air fryer or oven you use.
