We’ve been hard at work knocking back the summer over growth and getting our cool season crops tended.

A lot of w**ds have been pulled, a lot of tomato vines chopped, and the mowers/w**ders have run non-stop, but it’s looking much better. Our white aster Is in full bloom and is serving as a final nectar/pollen buffet for our hungry pollinators.

Students have been learning about composting/mulching (alongside covercropping and root exudates) as part of the nutrient cycling process in both agriculture and ecosystems, and which plants utilize toxins (like johnson grass) to protect from predation or are invasive (like bind w**d) which need their own separate compost pile. They’ve also learned a bit about surface area and how it impacts the rate of decay both in compost, but also in tilled soil in the form of CO2

With our hoop house having such a successful summer, there’s been a lot to compost. 😊

We are reaching the end of tomato season, and decided this week would be our final harvest, so we can make room for our legume crops of snap peas, bush beans, and pole beans.

You will see our compost pile filling, our beds suddenly looking quite clean, and if you peer into our hoop house by the end of Friday, our hoop house should be mostly cleaned out.

Tomatoes and peppers are heavy nitrogen feeders, so to remediate the soil, our hoop house will be 100% legumes to finish out the growing season.

What did we harvest today?

Bright lights Swiss chard, tomatillo, tomato, peppers of all sorts, cantaloupe, Asian pears, European pears, and some apples 😎

It took all day simmering in the kettle, and it’s finally done.

We ended up freezing 3 gallons of peppers and will use them for a candying lab focused on teaching students preservation using a slightly different method.

One of the daily lessons our students enjoy is the “organism of the day.” Early on, they learn about the Braconid wasp and the important role it plays in protecting our tomato plants.

In this example, a tomato hornworm had been chewing on our tomatoes. Now, its body is covered with dozens of tiny white cocoons. These cocoons were formed by Braconid wasp larvae, which the mother wasp deposited inside the caterpillar. The larvae feed internally, then emerge to spin their cocoons, eventually developing into adult wasps.

We discovered several of these parasitized hornworms in the hoop house today, giving students a powerful, real-world example of ecological balance and natural pest control in action.

We dropped off 3 5-gallon buckets of yellow red as onions from our gardens today, at Jerry Lee Jarret Life Center. This represents about 2/3 of our harvest. The other 1/3 will be used with the 5 gallons of tomato puree, and gallon of peppers we collected from our hoop house for a salsa and canning lab in the very near future.

We harvested so many tomatoes yesterday, they need to be frozen so we can use them for our salsa and canning lessons. So, today, students are getting a lesson on prepping tomatoes for later use. Next week we will harvest peppers and utilize some of the onions and tomatillos we grew this summer as well.
