Monday, our class discussed participating in a “Meatless Monday” challenge for this coming Monday, to give the body a break from meat, at least one day this week, so I wanted to share a few of my recent favorites🌱🌱🌱🌱
1. The first meal is loaded with quinoa, sautéed mushrooms, mixed greens, avocado, cucumbers, tomatoes, sweet baby corn, pickled okra, and red onion, because nourishing your body is an act of self-care. Pilates + plants = a lifestyle that helps me feel strong from the inside out. This is what I consider a well rounded meal for myself. Something warm. Something cold, delicious, nutritious, and healthy!
2. My cucumber salad is made with fresh cucumbers, juicy tomatoes, red onion, and a homemade Italian dressing that gets even better as it marinates. It’s light, refreshing, full of flavor, and the perfect plant-based side to nourish your body. Healthy eating doesn’t have to be complicated🌱🌱🌱
3. Sometimes the best meals come from a handful of fresh ingredients. This angel hair pasta is tossed with ripe tomatoes, whole garlic, extra virgin olive oil, and fresh basil for a light, flavorful dish that proves plant-based eating doesn’t have to be complicated. Usually I have tons of stuff in my pasta, but this was oh sooo good and fresh! Not canned sauce, the way I usually do when I’m in a hurry! Give it a try!
