I can feel a tinge of warm weather approaching! It's time to get the grill in order whether it be gas or charcoal. Get those delicious burger recipes dusted off and get ready to party with friends and relatives!

Chinese Traditional Steamed Dumplings (Siu Gow)
Ingredients:
1 pkg of ground pork
1/2 lb of raw shrimp
8 Sh*take Mushroom or White mushrooms
2 eggs
white pepper
oyster sauce
sesame oil
2 smashed garlic cloves
1 can of diced water chestnuts
Butter knife
Preparation:
Dice mushrooms, open can of diced water chestnuts, drain, chop up raw shrimp into a mash type consistency, add about 2 tablespoon of sesame oil, 2 tablespoon of oyster sauce, 1 egg, a dash of white pepper and the smashed garlic.
Mix thoughly. You will enjoy the essence of the combined flavor.
Wonton wrappers. I choose round but if your not near an Asian market, then square will have to do. Crack open the other egg. This will be the glue that seals the dumpling. Mix egg well.
Use a butter knife and take a small portion of the filling and place it in the center of the round wrapper.
Use your index finger and rub a little egg wash to the edge of the wrapper, 1/2 of the wrapper. Fold over the wrapper and you should have a 1/2 moon shape. Squeeze wrapper firmly where egg wash is.
In a steamer, line with parchment paper and place dumplings in, allow a little room between each dumpling. During the steaming process, the dumplings may stick to one another and you don't want that.
Well, you made your first dumpling. Oops!, how much timing to steam. As the filling cooks, the dumpling will be semi translucent. About 10 minutes. Take one out and taste. The wrapper should be a little chewy. or have a nice bite. Not mushy, if so, you steamed the heck out of it.

Happy Chinese New Year! It's The Year of the
Tiger 2022
Any Chinese New Year brings wealth and prosperity to all. It's a time
for celebration through visiting relatives and friends, eting lots of symbolic
foods that relate to wealth and prosperity.
Dumplings signify money and the shape of dumplings look like gold and silver
ingots, so buy a package of dumplings and serve it in your household!
Oranges, although orange in color resembles the color of gold, so by a bag of
navel oranges and longevity noodles represents long life and longevity, so buy
a pkg of ramen noodles but don't cut it and enjoy!
Chinese New Year Celebration started yesterday 2/1- 2/15. This time of the
year is so auspicious that certain words meaning good things are used but
words that mean bad things are avoided.
Being Chinese American this is still a struggle until you say the wrong word to
an elder, and the expression on their face is one of a kind! (A look of shock and
dismay).
Asian families are visiting friends wishing wealth and prosperity and giving the
young people not married the "red envelopes" wishing good luck in the coming
year.
The term "Gung Hay Fat Choy", translated doesn't mean Happy New Year but
instead wish you great wealth and prosperity.
The phonetic term of "Sun Nin Fi Lok" actually translates to Happy New Year.

Sometimes I say to my friends, what new cuisine is happening in Harford County, MD? It's always a great conversation to always look for different foods to try.
I'm getting tired of Popeye's Chicken, Chick Fil A, Pizza, Hamburgers, chicken etc....
Well my friend suggested a Caribbean Restaurant she saw in Edgewood, MD. She said its been around for awhile. I then decided to try it today.
When I think of Caribbean I think of Jamaican Meat Patties, Ox Tail and curry goat. Authenticity of these foods would hit the spot.
The restaurant is very clean and offers a cheery atmosphere. The inside is decorated in Caribbean decor.
I had seen the menu in advance, so I knew exactly what I wanted to order.
I asked for a Jamaican meat patty, oxtail, curry goat and jerk chicken wings.
I had to wait about 6-7 minutes.
What I got in each order was a tremendous portion of rice, shredded cabbage and a generous portion of either oxtail, curry goat and jerk chicken wings. Great value, I was impressed. I ordered the small size which could have been a large size. No kidding!
I wanted to try the oxtail first, my favorite. The portion was ample enough for me and the amount of meat with the bone wasn't over cooked nor was it undercooked. It was just right from a tenderness standpoint. The flavor was perfect, a tinge of sweetness and I could taste the thyme.
The curry goat was so tender with a curry flavor that wasn't overpowering.
The jerk chicken wings were perfect in taste. The spiciness of the jerk was very evident.
Overall, my experience was very pleasurable. On a scale of 1-5 with 5 being
excellent I give HotSpot Jamaican Restaurant a rating of 4.
I know that this is Jamaican cuisine is sweet but if its a little spicier, I would offer a rating of 5.
If your palate is looking for different flavors I highly recommend HotSpot Jamaican Restaurant. Why travel to Jamaica other than for the beautiful beaches.
