Butternut Squash and Feral Apple Soup

I miss growing my own food, fresh vegetables from the garden are hard to beet!

I loved witnessing trellising winter and summer squash grow from golden edible flowers into radiant fruits hanging off the vine and then transforming them into creamy soups from late summer into wintertime.

Yet not currently tending a garden leaves me more time to explore and discover other fall favorites…like rewilded feral apples from abandoned orchards and trees along winding backroads that have been left to grow on their own.

The apples may be small, oddly shaped and inconsistent yet many taste amazing and carry the potent vital energy of a wild plant that grows and fends for itself. I like to feel that they impart this stamina and vitality to me too when I respectfully gather and eat them.

You don’t have to use wilded apples for this soup, store bought and orchard picked will still do. And you may want to bake a few extra to eat on their own, maybe with a little coconut mana or cashew butter melted into the core.

1 butternut squash, cut and seeds removed.
Apples to your liking: it can be easier to core first to remove the seeds
Can of coconut milk
Grated ginger and garlic

Roast apples and squash with the cut side down; squash will take longer than the apples. I generally remove the skin for texture but both ways are good.
Cover grated garlic and ginger with hot water for about five minutes and then purĂŠe with butternut squash, apples and coconut milk.

Add hot water to desired consistency.

Reheat to combine and eat.

Spice as you like with salt, ground ginger, cinnamon, nutmeg, cumin, coriander, allspice, star anise, etc…. go light at first, you can always add more.

It is the first full day of Rosh Hashanah and Navaratri and right in the middle of Mabon, three spiritual traditions that honor the transformation of Autumn at the time of the new moon closest to the equinox.

I often become aware of these high holidays right as they are happening and like to incorporate awareness of this seasonal change and how others have honored it through time into my own contemplations and practice.
✨
Maybe you do too, so I share with you in case it helps you remember and develop your own ways of recognizing and facilitating transformation in your own life.
✨
On this day I am consciously becoming willing to see and let go of the things that are blocking me, especially the things I think I want, are helping and that I want to hold onto yet are not actually serving. May this open me to possibilities that holding on to what is not, or what is passing, is blocking me from accessing.
✨
If you would like to bring this as a sankalpa, or underlying intention to your practice, a way I often word it/allow it to crystallize into a form that I can work with is to ask myself and higher intuition:
✨
What am I becoming willing to grow? What am I becoming willing to let go of?
What beliefs and actions am I holding onto that are impeding the transformation potentiating inside of me at this current time?
✨
Sometimes the things we think we don’t want to let go of are the exact things that are keeping us from everything else.

As I sit I am reminded that I am a progressively transforming crystallization of all things, past, present and future, manifesting uniquely as me at the intersection of each consecutive moment of now.

I become immersed in the atmosphere that contains absolutely everything without having to think about any particular one.

There is an underlying sense of being at peace in that all is integrated in my awareness, that I am not fighting that any aspect exists.

This facilitates a reorientation that inspires me to once again begin again and work from where I am with how things currently are.

As I wander through the mountains I am often astonished when I round a corner and encounter an entirely new to me yet ancient landscape that until that moment I had not known existed from the vantage point of what I have experienced so far.

Which reminds me that there is always a much bigger picture than what we can see from the limits of our own current perspective.
