I used to bake a LOT! But since I had to give up gluten when I found out about my autoimmune conditions (Celiac disease and Hashimoto's thyroiditis) I've had to cool it with the baking a little. Now that I'm more informed about what's safe for me to eat I've been venturing into the world of gluten-free baking and I'm having so much fun! Here's my recipe for gluten-free corn muffins. Hope you enjoy!
