• 2 bell peppers, sliced

• Curry ketchup

DIRECTIONS
Melt butter in pan. Add onions and peppers, sauté until tender. Grill or pan fry the sausages until browned.

INGREDIENTS
• 2 (16 ounce) packages of Smokey Denmark’s Hotlinks, cut into 2-inch pieces.
• 3 tablespoons shrimp and crab boil
• 3 tablespoons salt
• 1 ½ gallons water
• 2 pounds tiny whole potatoes
• 12 ears freshly shucked corn, cut into 3 to 4-inch pieces
• 4 pounds medium or large shrimp

DIRECTIONS
In a large stockpot, add the shrimp and crab boil and salt to the water and bring to a boil. Add the sausage and potatoes and boil, uncovered, for 5 minutes. Add the corn and count 5 more minutes. Add the shrimp and count 3 minutes. Do not wait for the water to come to a boil when timing the corn and shrimp. Drain immediately and serve.
Serve with plenty of hot sauce and additional shrimp and crab boil.

• Fried eggs (1 per waffle)
• Shredded colby jack cheese
• Diced scallions
• Favorite ranchero or verde sauce

DIRECTIONS
Heat a regular or Belgian waffle iron. Arrange tater tots in an even layer across the entire surface of the waffle iron; pile another handful or two of tots if using a Belgian waffle iron. Sprinkle with salt. Press down on lid to close and cook waffle until golden brown, 6-10 minutes depending on your iron.
While the waffle is cooking, brown the sausage and fry the eggs.
Top the waffle with cheese, sausage, scallions, two fried eggs and your favorite ranchero or verde sauce.

Pigs in a Pretzel Blanket
Ingredients:
1 package Smokey Denmark’s Beer Brats
2 cans (13.8 oz) pizza crust (room temperature)
5 cups water
¼ cup baking soda
1 egg, beaten
Kosher salt, to taste
Prep time: 10 minutes
Cook time: 20 minutes
Directions:
Preheat oven to 425 degrees
Open the cans of pizza crust; stretch and roll them out. Cut into 1 inch wide strips.
Cut the sausage links in thirds.
Roll up the sausage in the pizza dough so the dough wraps around twice – leaving the ends sticking out and cutting off any excess.
Secure with a toothpick.
Place on a lightly greased baking sheet until ready to boil.
Bring water to a light boil; add in backing soda
Once dissolved, boil wrapped sausages in water mixture for 20-30 seconds each (working in small batches)
Remove and place back on baking tray. Brush each lightly with beaten egg and sprinkle with kosher salt and everything bagel seasoning.
Bake for 15-20 minutes until the dough is nicely browned.
Remove toothpick and serve with your favorite mustard.
