A new school year means new schedules and more hoops to jump through the get my workouts done.
In order to create some consistency and eliminate as much friction as possible, we are keeping it simple with a cycle (however long it needs to be) or
For movement I have my high goals of:
- 3 lifting days
- Plus 1 day with a 40min EMOM (to keep up my skills in other movements)
- 12,000+ steps a day
But when things don’t workout like I want them too I AT LEAST hit my 3 days or lifting and walk whenever I can hitting hopefully a minimum of 10,000 steps
Life with two busy kids and two working parents means it’s great to have higher goals but also important to be realistic and fit in what I can when I can. Especially as I am still learning to navigate life after getting diagnosed with ADHD at 31 yrs old. I am starting to understand where my faults have been in the past and why I struggled to follow certain plans to completion.

Haven’t posted in a hot minute.
Just got back from a trip to see family in Utah. I was hoping after 3 weeks at 5500 ft avg elevation that my workouts would be epic coming back to 700 ft elevation…false….elevation means nothing in 108° heat 🔥🔥

For weeks where I know my prep time is limited for meals I fall back on trusty balanced meals that take little to no prep and this is one of my favorites!
The Qunioa Salad + Cilantro Lime Shrimp from Costco.
Sometimes I will add some extra veg (like cucumbers or tomatoes) or avocado.

Shrimp + cabbage 🥬
Soy sauce + tiny bit of brown sugar + sesame oil + rice wine vinegar + crispy garlic oil
Top with green onions and sesame seeds

My latest obsession for lunch (and my husbands) Chickpea “tuna” Salad from Daphne Oz’ recipe.
Ours doesn’t always follow the exact recipe but it’s delicious every time!! Easily to have entirely vegan friendly!

Overnight oats - life pro tip
Melt some coconut oil and stevia sweetened chocolate chips in the microwave and pour over your overnight oats before placing them in the fridge.
Then eat dessert for breakfast 😀

Do I make homemade hummus to have something to go with my veggies OR do I make it so my veggies can simply be a vehicle for the deliciousness that is my homemade hummus? 🤔 😆
My homemade hummus is a relative recipe depending on what sounds good/what I have.
1 can of chickpeas, drained -Aquafaba saved
Juice of 1-2 lemons
2 Tbsp olive oil
2 Tbsp to 1/4 cup tahini (personal choice)
Salt and pepper to taste
Cumin and paprika to taste
Throw chickpeas, oil, juice, and tahini into food processor or smash together in bowl. Add seasoning to taste and drizzle in aquafaba until you reach a smooth consistency.
Enjoy with veggies, pita, crackers, or a spoon 🥄 🤣😅
