Baked Long Eggplant Sabzi
The long eggplants are either known as Chinese or Japanese, depending on the shade of purple and length. They have really tender and soft skin and are often found in Asian, Indian, and Middle Eastern stores.
These baked eggplant slices are very easy to put together and perfect with a bowl of rice & dal or in sandwiches with some marinara sauce.
I did want to make some sandwiches the next day but they disappeared pretty quickly so will add more pictures later on the blog.

Simple Sides: Sautéed Sweet Potato
There are over 15 types of sweet potatoes around the world and all belong to the morning glory or Convolvulaceae family. All the 15 varieties look similar on the exterior, reddish-brown in color and tapered at both ends. In the US, they tend to be orange on the inside while in India they are creamy beige when sliced. Both are sweet and a dream to cook with. Sweet potatoes can be baked, roasted, fried, steamed, and can be turned into a great side dish or a dessert. Additionally, they are dense in proteins, vitamins, and fiber so use them often and freely.

Rice Noodle Salad-Indian Chinese style!
There is no mystery to this snack that can be served hot, warm, or cold. I personally prefer a hot bowl of noodles, generously topped with crushed peanuts and red chili flakes or chili oil.
I am not 100% sure where this recipe comes from but it is something we made often as teenagers in an era before ubiquitous internet, streaming platforms, and international travels.
This one can only be broadly classified as Indian Chinese. Indian Chinese cuisine is a fusion of spices and ingredients that borrows from both cultures.
There are a few pockets around India, especially in large cities like Mumbai, Delhi, and Kolkata, that are home to Indians of Chinese origin. Their numbers however are dwindling fast due to political, economic, and social reasons but Indian Chinese is one of the most popular cuisines in India and there is a range of these sweet, tangy, spicy products like sauces and masalas that can be bought in stores to create the popular Indian Chinese dishes at home.

Moroccan Red Lentil Soup
This is a warm and hearty soup with robust textures and flavors. North African cuisine offers several recipes for hearty broths that combine meat, vegetables, lentils, or chickpeas.
The use of cinnamon, cloves, and cumin is what gives this soup its unique yet familiar taste.
I love to add fresh veggies to this soup to make it a one-pot meal and usually allow it to cook overnight in a slow cooker so that there is a warm meal ready for lunches or brunches.

Quick 'n Easy Dum Aloo
This version is a riff on the classic but of course, modified to be made quickly in a pressure cooker or instant pot.
Not only is this curry delish but the teeny potatoes coated in a thick gravy look darn cute and tempting. Tear off a piece of naan or roti and scoop up one baby spud at a time.

Winding down for fall break on this hurtful holiday.
They fed and honored guests who showed up uninvited and received smallpox, boarding schools, and colonization in return.
