In my latest article titled Experimental Fermentation in Specialty Coffee, I talk about some of the risks and benefits of coffee farmers and mills experimenting with novel ways to ferment coffee during processing. Some of the more radical fermentation methods can produce a coffee that is quite different from your every day drinker. Would you drink a coffee that is more reminiscent of kimchi than chocolate?
