Last week as part of Northland College Martin Luther King Jr. Day events, we hosted student and faculty volunteers to prepare soup for the Ashland Community Shelter. Thanks to generous ingredient donations and amazing volunteers, we were able to prepare 32 quarts of soup using locally grown vegetables. In solidarity and with love from your HRFC team. ❤️

Students Anna and Ellie made a large batch of Chana masala last week (10 gallons to be exact) for Chartwells at Northland College. This batch features dry organic chickpeas, River Road Farm tomatoes and garlic, Hermit Creek Farm onions, and ginger and spices from Chequamegon Food Co-op. What a great reminder that food requires community! Catch this in the Baldwin Commons soon!
The recipe comes to us from “Ripe Figs: Recipes and Stories from Turkey, Greece, and Cyprus” by Yasmin Khan

This semester, senior Adrian Bethel is completing his sustainable agriculture minor with an independent study of IDS 132 Food Preparation and Preservation. The course emphasizes kitchen and food preservation techniques, and discusses the significance of preserved and processed foods in historic and contemporary foodways. This week focused on the uses of salt and acid for preservation—think pickles, lacto-fermentation, curing—and baking yeasted dough. Lox, bagels, and pickled onions are delicious assignments!
