BALELA Salad ( Mediterranean region, Middle East)
Balela Salad is a light and healthy salad perfect for summer season.
Ingredients
1 - 15 ounce can chickpeas, rinsed and drained
1 - 15 ounce can of red kidney beans or black beans, drained and rinsed
3 medium tomatoes, diced
1/2 yellow sweet pepper
1/2 orange sweet pepper
1/2 cup of a sweet onion, diced
1/2 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
For the dressing::
1/3 cup extra virgin olive oil
2 Tablespoons red wine vinegar
1 lemon, juiced
1/2 teaspoon sumac
2 garlic cloves, minced
1 jalapeño, seeds removed, finely chopped
1/2 teaspoon sea salt
1/4teaspoon black pepper
Instructions
In a large bowl combine the chickpeas, red kidney or black beans, tomatoes, onion, sweet peppers, mint and parsley.
Using a mason jar or a salad dressing container mix together the olive oil, red wine vinegar, lemon juice, sumac, minced garlic, jalapeño, salt and pepper. Taste and adjust seasoning.
Pour the dressing over the salad and toss to combine.
Refrigerate until ready to eat.

Curry Coconut Chicken Stew
4 lb chicken (boneless and skinless), cut into chunks
4 tablespoons vegetable oil
2 large onions, minced
3 garlic cloves, crushed
3 tablespoons curry paste
2 tablespoons curry powder
1.5 tablespoons sugar
2 teaspoons salt
1 vegetable maggi
2 cups chicken broth
3 cups coconut milk
1 can of baby corn (if available)
1 can bamboo shoots (if available)
4 stalks fresh lemon grass (if available)
1. Heat 1 tablespoon of oil in large saucepan. Add onions, garlic, and fry until the onions softens, then add chicken pieces and stir-fry until they change color.
2. Add curry paste, curry powder, sugar, salt and Maggi to the pot. Stir well and cook for 10-15 minutes on medium heat.
3. If you are using lemon grass, discard the outer leaves and upper half of the stalks and add them to the chicken. Add coconut milk, corn and cook for 10-15 minutes or until chicken is tender.
Serve with rice, yam, sweet potatoes or regular potatoes.
You can always add hot peppers to your taste.

Greek Salad
INGREDIENTS:
4 medium-sized tomatoes, cut into wedges
1 English cucumber (or two small Persian cucumbers), sliced into half moons
1 large green bell pepper, thinly sliced
1 small red onion, thinly sliced
3/4 cup kalamata olives
3-4 tblsp olive oil
2 tblsp red wine vinegar or lemon juice
1 tsp dried oregano, plus extra for serving
Sea salt
5 oz feta cheese, thickly-sliced if possible
DIRECTIONS:
* Combine the tomatoes, cucumber, bell pepper, red onion and olives in a large mixing bowl. Drizzle evenly with olive oil and red wine vinegar or lemon juice, and sprinkle with the oregano and a pinch of salt.
* Toss briefly. Then top with feta cheese. And finish the salad by drizzling a little extra olive oil and adding another pinch of oregano on top.
* Serve right away or refrigerate in a sealed container for up to 3 days.
* Enjoy!

Winter Surimi Salad Tartlets
Ingredients:
1 pack Imitation Surimi crab stick (8oz), cut in small pieces
3 eggs (boiled and peeled)
1 can sweet corn (drained)
1/2 pound medium shrimps (cooked), cut in small pieces
3 springs green onions (aka scallions), chopped
1/3 cup mayonnaise (amount varies to your likeness)
2 tbsp dijon mustard
Salt and black pepper to your taste
Direction
Combine all ingredients in a bowl then add mayonnaise and mustard.
Mix all together.
Salt and pepper to taste.

Soup with okra and turkey meatballs
For meatballs
1 pound of ground turkey
1/2 small onion (finely chopped)
2 tsps of Italian spice
Salt and black pepper to taste
For soup
1/2 small onion (chopped)
2 shoots of green onions (chopped)
2 medium carrots (cut into)
2-3 medium yellow or red tomatoes (chopped)
2 medium potatoes (cut into 8 pieces),
12-15 pieces of okra, medium size
1 tablespoon of tomato paste
2,5 quarts of chicken broth
2 bay leaves
Salt, pepper and spices (Italian) to taste
Mix ground turkey with onions, salt, pepper and spices. Form small meatballs.
Cook onions, green onions and okra in olive oil until okra is done. Add sliced tomatoes and tomato paste, and sauté for 5 minutes. Add chicken broth, carrots and bay leaf, bring to a boil. Add chopped potatoes and meatballs and cook until meatballs are done. Salt, pepper and spices to taste. Enjoy

Sesame Teriyaki Stir fry
Sliced pork, sweet peppers, sweet onions, broccoli, teriyaki sauce and rice.
1) Marinate sliced pork meat with stir fry sesame spice and teriyaki sauce for at least 1 hour.
2) Pre heat oil in the deep frying pan, add meat not the sauce (don't discard the sauce) and cooked on medium high heat until meat cooked.
3) Remove meat from the pan. Add remaining sauce to the pan and cook until it's reduced in half. Add square cut onions and peppers, and cook until it soft but still crunchy.
4) Add steamed broccoli and the meat to the pan and cook for 3-5 minutes.
5) Serve with rice.
