Never underestimate the power of a small space. This little balcony garden will produce loads of food and is just getting started.

Veggies, salad greens, herbs, and even dwarf fruit trees can all thrive in a space like this.

You’ll need to be a little creative, make sure there’s access to water and good roof drainage.

Then, it’s whatever your heart desires.

Think about what you love to eat, perennial herbs that will return every year, and climbing plants and potted items to take advantage of floor space.

You want a beautiful round loaf but it turns out flat and sad.☹️

Here’s the remedy:
Pre-shaping is a crucial step in making a sturdy loaf of sourdough.

1. Turn out your dough on a well floured surface.

2. Stretch your dough into an oblong circle, and begin folding towards the center starting at the bottom, then each side like you’re building a little envelope.

3. Don’t fold the top of the envelope down towards the middle. Instead, take the bottom and begin to roll it towards the top.

4. Create tension as you roll, and once
the envelope is closed with all four corners, facing down, begin circling the dough as you continue to create tension on the top.

This provide structure that will hold your loaf in place during baking.

Do this step as your first shaping and let your dough bench rest for at least 10 minutes. Then, turn the dough upside down in a bowl with envelope corners, facing up, cover with plastic wrap, and a towel and refrigerate overnight.

Bake in the morning and you will have a gorgeous loaf to present to everyone you love!
