I tried my hand at a Vegan Tikka Masala for today's lunch😛

In addition to the tofu, I added squash and zucchini to mine!
It added some great texture and was super tasty!

For today's breakfast, I am having homemade gluten-free honey bread with honey butter, apples, and pears, complimented by some mint leaf tea and a fresh smoothie!
This is the amazing recipe I follow to make this delicious homemade gluten-free honey bread!

In addition to the recipe, I like to add lemon or orange zest to give the bread that little extra zing and I always try to use local Alaska honey!
