A quick and easy weeknight meal.
Ingredients:
1 pound boneless, skinless chicken breasts, thinly sliced
1/2 cup pineapple chunks, drained
1/4 cup teriyaki sauce

1/4 cup soy sauce

Greek Meatball Bowl with Tzatziki, Rice & Fresh Veggies 🥙🍚🥗✨

Ingredients
For the Greek Meatballs 🍖
500g ground beef or lamb (or a mix)
1/4 cup breadcrumbs (or almond flour for gluten-free) 🍞
1 egg 🥚
2 garlic cloves (minced) 🧄
1/4 cup red onion (finely chopped) 🧅
1 tbsp fresh parsley (chopped) 🌿
1 tbsp fresh dill (chopped) 🌿
1 tsp dried oregano 🌿
1/2 tsp ground cumin 🌿
Salt & pepper to taste 🧂
For the Tzatziki Sauce 🌿
1/2 cup Greek yogurt 🥛
1/4 cup cucumber (grated and squeezed to remove water) 🥒
1 garlic clove (minced) 🧄
1 tbsp olive oil 🫒
1 tbsp fresh dill (chopped) 🌿
Juice of 1/2 lemon 🍋
Salt & pepper to taste 🧂
For the Bowl Base 🍚
2 cups cooked jasmine rice, basmati rice, or cauliflower rice
For the Fresh Veggies 🥗
1 cup cherry tomatoes (halved) 🍅
1 cup cucumber (sliced) 🥒
1/2 cup red onion (thinly sliced) 🧅
For Garnish (Optional) 🌿
1/4 cup crumbled feta cheese 🧀
1 tbsp olive oil drizzle 🫒
Lemon wedges for serving 🍋
Directions
Make the Meatballs:
In a large bowl, combine ground meat, breadcrumbs, egg, minced garlic, red onion, parsley, dill, oregano, cumin, salt, and pepper. Mix well until evenly combined. Roll into small meatballs (about 1.5 inches in diameter).
Cook the Meatballs:
Heat a skillet over medium heat and add a drizzle of olive oil. Cook the meatballs for 8-10 minutes, turning occasionally, until browned on all sides and fully cooked through. Alternatively, bake them at 200°C (400°F) for 20 minutes, flipping halfway through.
Prepare the Tzatziki Sauce:
In a small bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Stir well and chill in the fridge until ready to serve.
Assemble the Bowl:
Divide the cooked rice among 4 bowls. Top each with meatballs, cherry tomatoes, cucumber slices, and red onion.

Savory Ground Turkey & Roasted Veggie Rice Bowl 🥦
A protein-packed, flavor-loaded meal that’s easy and satisfying!
📝 Ingredients:
For the Ground Turkey:
1 lb ground turkey (or chicken)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon soy sauce
1/2 teaspoon chili flakes (optional)
1/2 cup mushrooms (chopped)
1/4 cup onion (diced)
For the Roasted Veggies:
1/2 cup zucchini (sliced)
1/2 cup yellow squash (sliced)
1/2 cup bell peppers (chopped)
1/2 cup broccoli florets
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Bowl:
1 cup cooked white or brown rice
🍽️ Step by Step:
1️⃣ Prepare the Roasted Veggies:
Preheat oven to 400°F (200°C). Toss zucchini, squash, bell peppers, and broccoli with olive oil, salt, and pepper. Roast for 15-20 minutes until tender and slightly charred.
2️⃣ Cook the Ground Turkey:
Heat olive oil in a pan over medium heat. Add diced onions and mushrooms, sauté for 3-4 minutes.
Add ground turkey, breaking it apart. Season with salt, black pepper, garlic powder, onion powder, and chili flakes.

Greek Style Loaded Hummus 🥙✨
Ingredients
Base:
2 cups hummus (store-bought or homemade)
Toppings:
¼ cup kalamata olives, pitted and chopped (optional)
1½ cups cherry tomatoes, halved or quartered
½ cup sliced cucumbers (about 4 mini cucumbers)
1 small red onion or shallot, thinly sliced (about ¼ cup)
2-3 pepperoncini peppers, thinly sliced
1 clove garlic, minced
½ teaspoon oregano
Salt and pepper, to taste
¼ cup olive oil
1–2 tablespoons finely chopped fresh herbs (parsley, mint, chives) + extra for garnish
Sumac or paprika, for sprinkling
Optional Additions:
Toasted pine nuts
Lemon slices or wedges for serving
Instructions
1️⃣ Prepare the Veggie Topping:
In a medium bowl, toss the cherry tomatoes, cucumbers, red onion, garlic, and olives (if using) with the oregano, olive oil, and a generous pinch of salt and pepper.

4 oz goat cheese, softened
½ cup dried cranberries
2 tablespoons honey (optional)
Fresh thyme leaves for garnish
Balsamic glaze for drizzling
Flavor:
The sweet, caramelized flavor of roasted sweet potatoes pairs beautifully with creamy goat cheese, tart cranberries, and a tangy balsamic glaze.
Texture:
Crispy sweet potato rounds topped with creamy goat cheese and chewy cranberries.
Directions:
Prep and Roast the Sweet Potatoes:
