No-Bake Monster Cookie Bars 🍪

Ingredients

* 3 cups quick oats
* 1½ cups creamy peanut butter
* ½ cup honey
* ½ cup brown sugar
* 1 tsp vanilla extract
* ½ tsp salt
* ½ cup mini chocolate chips
* ¾ cup mini M&M’s
* Âź cup shredded coconut, optional
* 1½ cups chocolate chips, for topping
* 2 tbsp peanut butter, for topping

Instructions

1. Line an 8x8 or 9x9-inch baking dish with parchment paper or lightly grease it.
2. In a large bowl, combine the peanut butter, honey, brown sugar and vanilla. Stir until smooth.
3. Add the quick oats and salt. Mix until everything is thoroughly coated.
4. Fold in the mini chocolate chips, M&M’s and shredded coconut.
5. Transfer the mixture to the prepared dish. Press it down very firmly into an even layer.
6. Place the chocolate chips and 2 tablespoons peanut butter in a microwave-safe bowl. Microwave in 20–30 second intervals, stirring between each, until completely melted and smooth.
7. Pour the melted chocolate over the bars and spread it evenly to the edges.
8. Refrigerate for 1–2 hours, or until the bars are firm and the chocolate has set.
9. Remove from the pan and cut into squares.

Parents, this is worth reading.

☀️Parents often get frustrated with their children because they KNOW the kid KNOWS that they shouldn’t do the thing that we keep telling them not to do. Whether it is complaining or squabbling with a sibling or picking their nose. ⠀
⠀
☀️It’s a first reaction to think you need to double down on rules or discipline, but this angle is always worth thinking about: If the kid KNOWS not to do something but is doing it anyway, what is it that they DON’T KNOW? ⠀
⠀
☀️A lot of the time what they don’t know is that you love them. What they aren’t feeling so deep in their bones is how proud of them you are, how happy you are to have them, how much you LIKE them. They may have a perfect mastery of what you don’t like, but are unable to recall a far more crucial piece of information - who you DO like.⠀

☀️So try this with your difficult child- give them a hug every time you see them. Grab their little face and look in their eyes and tell them that you LOVE them. That you have always loved them. Tell them specific things that delight you- this is thirsty ground and it is hard to over water! So work on your irrigation system. Get water to all the corners. Tell them what you respect about them. Tell them you love how strong they are, how they stand tall, how they laugh, how they read. Itemize your joy in them!⠀

☀️You might already be thinking “But I don’t enjoy him because he’s being bad all the time!” ⠀
Well do you think he hasn’t noticed that? Do you think he hasn’t felt that you don’t enjoy him? That you aren’t pleased? I can assure you he HAS noticed this and he does not know the way out of it. ⠀

☀️Should our plants look more alive before we start watering them? But watering with love and respect is not a reward for good growth- it facilitates growth.⠀

☀️If you aren’t feeling it, ask the Lord to give you the feelings to follow the obedience. Start loving, start hugging, start admiring, start. I often yell “MOSES IS IN BIG BIG BIG BIG BIG TROUBLE!” - this has long been our game that whichever kid I name has to get to me and give me a hug before I get to “trouble.” Never assume they know you love them.⠀
