I’m working on my computer at the dining room table and I hear Nate reading. I look up and he’s reading the Bible, particularly Jesus telling the story of the mustard seed. I may be over simplifying the parable, but your small faith can grow tall. I think about how we guide and teach our children. They are little mustard seeds. With the proper amount of care, support, discipline, and structure our children have limitless potential. Thank you for bringing this to my attention Nathan 🥰

Peach Salad w/ Agave Champagne Vinaigrette

Y’all. YALL!!!! This salad popped into my head earlier this week. Peaches, cherry tomatoes, English cucumbers, mint & thinly sliced red onion. I made a dressing w/ extra virgin olive oil, minced garlic, good Dijon mustard, agave nectar, champagne vinegar, salt & pepper.

It’s delicious just like that, but if you look in the comments you can see I added chunks of blue cheese and bacon 🥓 🤤

I bought a loaf of sourdough to make croutons. I’m definitely going to add those later. Delicious! I didn’t really measure anything, but I highly recommend you get the best quality of all the ingredients as you can. It makes such a difference! I hope this inspires you!

Roasted Mushroom & Herb Pasta

I made this pasta when my longtime bestie came to visit last month. I want to give you this recipe but I need some time to write it down properly.

The gist is seasoned roasted mushrooms. Lots of garlic, herbs, & olive oil. A little lemon juice. Topped with crunchy seasoned bread crumbs. The roasted mushrooms get a little crisp and some pieces taste like bacon 🤤

Having a kid has forced me to do more baking. Nate and I made homemade vanilla cupcakes with vanilla cream cheese frosting. It’s filled with a strawberry fruit spread surprise.

I used a mash up of two different recipes. I’m not sharing the recipe, because I pretty much did the recipes as written, except for adding the strawberry surprise.

Y’all I really shocked myself with these ones. Moist, but fluffy. Not too sweet & the tart strawberry filling was 😚

Nate loves tasting the batter and cracking eggs. He liked the frosting, but didn’t want to actually eat the final cupcake 🧁🙄 Go figure. Glad I only made 12.

I need to work on my piping skills, but I’m getting better. This was a winner in my book!

Bake with your kids. They learn counting and units of measurement. Math and food!

Hey y’all! I hope you’re enjoying your weekend. I’ve been obsessed with making this Texas style blueberry cobbler. I’ve adapted it from modernhoney.com

I’ve made both dairy and vegan version. Here’s the recipe.

1 1/2 sticks of butter (vegan or dairy)
2 cups of blueberries (fresh or frozen)
1 1/4 sugar plus and additional 1/4 to sprinkle over the berries
1 1/2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups milk (buttermilk or nondairy)
2 teaspoons Vanilla extract
Zest of one lemon

Preheat oven to 350 Fahrenheit. Place 1/2 stick of butter in 9 x 13 baking dish and place into the oven to melt. Do not let the butter burn! Melt the other stick in the microwave and set aside to cool.

Place berries, 1/4 cup sugar, and lemon zest in a bowl.

Mix flour, 1 1/4 cups sugar, salt and baking powder with a whisk in a separate bowl. Add milk & vanilla. Whisk in butter. The batter will be thin.

Pour batter into buttered dish. Drop the blueberry mixture on top of the batter. You can sprinkle some sugar over top if you like, but it’s optional. Bake for about 40-45 minutes or until you insert a knife and it comes out clean.

You can serve it right away or room temperature. Top with vanilla ice cream or fresh/non dairy ice cream.

This will be your go to dessert! It’s fast and a crowd pleaser. If you make it, make sure you tag me! Enjoy!

Tried something a little different. I made Parmesan Crusted Salmon. Takes 15 minutes on 400 degrees Fahrenheit. Mix the ingredients together.

1/2 c plain breadcrumbs
3 cloves garlic minced
1/4 tsp salt
1/4 tsp pepper
1 tbsp of chopped fresh parsley
3 tbsp grated Parmesan cheese
2 tbsp of melted butter

I seasoned the fish with salt, pepper, salt free seasoning, garlic powder, & onion powder. I brushed a teaspoon of Mayo over the fish.

On a foil or parchment lined sheet pan place the fish & press the breadcrumb mixture on the fish.

Adjust time to the thickness of your fish. This was delicious. Moist and crispy. It was very satisfying 😋 This covered two 6 oz pieces.

I made pork meatballs with coconut lime rice. The recipe calls for an herb salad but I only had cilantro & scallions so I air fried some broccoli and threw in some pickled onions I made on Sunday for my avocado toast. This was really delicious. I’m enjoying trying new flavors and loading up on veggies. I’m feeling really satisfied ☺️ You should check out for some fresh and intuitive recipes!
