The Pinney Purdue Ag Center (PPAC) Field Day yesterday was a great opportunity for Educator Ann Kline to teach anhydrous ammonia (NH₃) safety. Hands-on demonstrations are effective to communicate the dangers of NH₃ and the critical importance of having water available!

Did you know there are 3 ways NH₃ can cause injury?
1. It is extremely cold and can freeze skin and other tissues.
2. It seeks water. “Anhydrous” means without water. When NH₃ reacts with moisture in our bodies, it can dehydrate and damage skin, eyes, and more.
3. It is highly alkaline. Contact can cause serious caustic burns to skin and eyes, and tissues.

The demonstrations at PPAC reinforce some important safety messages:
Slow down.
Know safety procedures.
Have water available.
And respect anhydrous ammonia each time you handle it.

ServSafe® Food Protection Manager and Indiana Certification Requirements:
Indiana requires each food service establishment to have one certified food manager on staff. New establishments have 6 months to comply. If an establishment only has one certified food manager and that person leaves employment, the establishment has 90 days to certify another food handler. Each establishment must have a person-in-charge that can demonstrate knowledge of food safety practices.
Indiana’s certified food manager law requires an exam that meets the ANSI-CFP requirements. Training for the exam is not required; however, training is beneficial in helping pass the comprehensive exam.

Training Options:
Because the exam is comprehensive, study is recommended. Options for training include:
• Independent Study – purchase a ServSafe® manual ($88) through Purdue Extension or ServSafe® to assist.
• Classroom Study - ServSafe® 1-day (8-hour) training with examination (includes manual) - $165
• Online Course Study – This option is not offered by Purdue Extension. To use this option, you must register directly with ServSafe® (servsafe.com) and pay for the online course and exam. If you wish to have your exam proctored in-person by Purdue University, the fee for a “proctor only” exam is $30.
Exam:
ALL ServSafe® Food Protection Manager exams must be proctored by a ServSafe® - approved proctor (in- person or online).
All Purdue Extension trainings INCLUDE the cost of the exam.
Exam Only dates are offered for those who study independently or need to retest.
You may register to take an exam offered as part of a training, without taking the training. Exams may be offered independently; contact a ServSafe® proctor for more information.
