Being able to bring together a group of travelers hailing from New York, Vermont, Colorado, and Virginia for another Culinary & Wine Tour is something for which we’re happy and grateful. What a wonderful way to close out another season at La Centralita! A mix of regulars and new guests, and a multi-course menu featuring some of the most popular dishes from the past few months, topped off with a sweet gift from a lovely Vermont couple. ¡Chorizo a la sidra! means cider in and is the combination of “sagar”(apple) and “ardo”(wine). Made with the natural yeast of the fruit and no added sugar, it’s dry and slightly acidic. If you cook fresh pieces of with a generous splash of Basque , the result is simply delicious. Don’t forget the bread to dip it in!

What a nice, jovial group of guests coincided last night at La Centralita. Here are four of the six courses they enjoyed!
Weekdays turn La Centralita into a small R&D lab. Last night’s case: caramelized roasted potatoes paired with a classic salsa española, a flavorful red wine sauce. Plate-licking good!

¡Manzana asada! Probably one of my favorite desserts, for its flavor, simplicity, and different textures. A cinnamon and citrus-infused custard base, topped with a freshly baked apple (with no added sugar or butter) and some cookie crumbles for extra crunch.

Tonight we’re celebrating an event titled Wintery , so for dessert we just had to include one from my home region in the : ! Literally, walnut sauce, a creamy pudding made from finely ground walnuts, sugar, and cinnamon infused milk, slowly cooked until it is thick and smooth.
