This week our Community Food Systems class visited the Rio Grande Farm Park the Local community gardens. It was a great experience and we finally got to see something green and some bees! It is great to see the community food system come to life along with the life brought by spring.
While visiting the La Puente's Food Bank Network of the San Luis Valley this week, our Community Food Systems class took the opportunity to get some hands-on learning. We stocked the shelves, condensed a 100 pound bag of beans into smaller bags for distribution, and even helped prepare donation boxes for those in need. It was a fun, educational, and eye opening experience. We are glad we could take part in learning about and helping our community food system.
During our Adams State University day of reflection and as we draw closer to the middle of our semester our students are given the opportunity to reflect on the lessons we have learned and those who have shared them with us. From the San Luis Valley Local Foods Coalition, Boys & Girls Clubs of the San Luis Valley, to The Valley Roots Food Hub, White Mountain Farms, San Luis Valley Solid Waste Authority, Adams State Kitchen, our supportive community, Dr. Nikki Kasper and more. Thank you all for the work you do for us, all the support you have given and knowledge you have shared in our growing education. Especially for sharing the drive and passion you have for food in our community.
Today, we visited the San Luis Valley Solid Waste Authority, the regional landfill for our 6 county region.
Food and packaging waste are usually out of sight, out of mind but make up the majority of our household waste. We drove on hills, atop of 42 feet of compacted trash today. We learned that, on average, each person creates 9 pounds of trash per day and things have gotten worse as a result of covid.
Our Community Food Systems class was able to visit the Boys & Girls Clubs of the San Luis Valley this week. Their contributions to the community are remarkable and the students were happy to learn how food has played a role in that positive impact now and into the future.

Adams State food studies program to boost San Luis Valley local food economy With a $125,000 grant from the Outcalt Foundation, the program will become even more robust over the summer, when crews will finish work updating a commercial kitchen in the East Campus building.
Our Community Food Systems class took a trip to the Valley Roots Food Hub. We had a great time learning first hand about the local food system and how the Food Hub adds to our access to quality local food. Valley Roots Food Hub
Several years ago, a group of students and staff came together to start the Adams State Student garden. It was an amazing effort that led to a dedicated garden space at the University. The Food Studies program is taking over management of the garden and it will be incorporated into our curriculum. It will also continue to be a community space for growing and learning.
Last week, students from Adams State's Food Studies program took a short fieldtrip to the Adams State kitchen. There Chef Justin shared with us how a kitchen is run, measures taken to ensure food safety and adjustments that were made because of Covid-19. We may have had a few sample while we learned.
