Need some summer recipes? 🍓 🌱 Try this summer berry chia pudding recipe:
Very Berry Chia Pudding
Recipe is for 8 – ¼ cup servings
Pudding Ingredients:
2 cups - Almond Milk, Unsweetened
2/3 cup - Chia Seeds
3/4 cup - Fresh Blueberries
3/4 cup - Strawberries, Fresh, Sliced
2 Tbsp - Pure Maple Syrup
1/2 tsp - Pure Vanilla Extract
1 tsp - Ground Cinnamon
1/8 tsp - Ground Nutmeg
Ancient Grain Granola Ingredients: (makes 2 cups of granola)
1 Tbsp – Olive Oil
1 Tbsp – Pure Maple Syrup
½ cup – Sugar
½ tsp – Cinnamon
1 cup – Oats
½ cup – Rice Krispie Cereal
1 Tbsp - Pumpkin Seeds
1 Tbsp - Chia Seeds
¼ tsp- Orange Zest
1/8 tsp Kosher Salt
Directions
Mix all ingredients together.
Place in a small jar or reusable container.
Place in refrigerator overnight (at least 8 hours).
Mix all ingredients for the Ancient Grain Granola in a large bowl
Spread onto a parchment lined baking sheet and bake at 275 degrees for 35 minutes
Cool and store in an air-tight container.
Add 1 Tablespoon of Ancient Grain Granola on top and ENJOY!
Fun facts about this recipe:
Culinary:
Chia seeds will expand and thicken the pudding as it sits. Do not increase the amount of seeds in the recipe or it will become too thick.
Allowing the pudding to sit for 8 hours will allow for the pudding to thicken.
Add granola right before eating.
Wellness:
Chia seeds are an excellent source of fiber, which can improve heart health, reduce cholesterol levels, and promote digestive health.
Chia seeds are loaded with omega-3 fatty acids, which have been shown to lower heart disease risk by reducing inflammation, triglycerides, and blood pressure. Some evidence suggests omega-3’s can also support brain health and boost mood.
Chia seeds provide a great source of antioxidants, which may have protective effects on your heart and liver, as well as anti-inflammatory and anti-cancer properties.
Blueberries are one of the most nutrient dense berries. They provide fiber, Vitamin C, Vitamin K and Manganese to your diet.
Sustainability:
Chia seeds do not require pesticides or chemicals for growth.
