Foodnotes How to Make Ghee. Ghee butter is essentially clarified butter that is cooked a bit longer until the clarified butter is golden and the milk solids at the bottom are toasted (but not burnt!) Ghee butter does not need to be refrigerated so this would be perfect to have stored in your preps and at least you have no worries about butter if the power goes out too. This is healthier than real butter too.
