From Mae Jan Tai in Chiang Rai, a small Akha village surrounded by mountains and deeply connected to coffee, comes a profile shaped by both nature and the determination of its community. The area once had a history of o***m cultivation before gradually transitioning to coffee around two decades ago. Today, coffee has become an important crop for this community of approximately 40 households. With high elevations, a cool and humid climate, fertile soil, natural water sources, and coffee trees growing beneath the shade of larger trees, Mae Jan Tai has developed into a distinctive Thai coffee origin where people, environment, and years of dedication come together in every harvest. 🌱

Behind this lot is farmer “Sinthop Sumio,” or Khun Sinthop, who has lived and worked closely with coffee for many years and has been committed to improving its quality since 2000. His approach focuses on careful attention from the beginning of cultivation through to the final stages of production. This Catimor - Typica coffee is grown at approximately 1,500 masl. and processed using the Natural Process, allowing the beans to develop together with the fruit and its natural sugars throughout drying. This approach enhances sweetness and fruit-driven character, creating the Colorful & Fruity profile at the heart of this coffee. What makes the lot meaningful is not only its variety or processing method, but the intention behind every stage — a continuous effort to develop Thai coffee and bring greater value to what is grown in Mae Jan Tai.

It gradually opens into the juicy sweetness of ripe Mango, followed by Pineapple, which adds a vibrant Tropical Fruit character and lively acidity to the middle of the cup. From the coffee-growing highlands of Doi Chang, Chiang Rai, Memory of Love is a Thai coffee born from a collaboration between SOCOF, Yayo Farm, and the Coffee Chemistry Lab team. The project began with the study of Coffee Chemistry & Fermentation, exploring how microorganisms naturally associated with a coffee-growing environment can influence aroma and flavor. This lot comes from Jomjai Coffee, Yayo Farm, grown at approximately 1,200 masl. using the Catimor variety. Its name also carries a deeply personal story: “Jomjai” was the name of Bee Yayo’s beloved older sister who passed away, while Ministry of Roasters presents the same coffee under the name Memory of Love — allowing that memory to continue through every cup. 🌿💗

At the heart of this coffee is its Selected Yeast Process. Rather than simply using a standard commercial yeast, the project began by isolating and studying microorganisms from coffee cherries grown in Doi Chang. Experiments were then conducted at Coffee Chemistry Lab to identify microorganisms with distinctive sensory potential before selected cultures were propagated and reintroduced into the processing stage. After harvesting, the cherries are cleaned to reduce unwanted contamination, depulped, and placed into fermentation tanks with three selected yeasts: Pichia kluyveri, Pichia kudriavzevii, and Meyerozyma carpophila. The coffee undergoes 4 days of Aerobic Fermentation, followed by 2 days of Anaerobic Fermentation. Once fermentation is complete, pH and Brix are measured before the coffee is naturally air-dried to the desired moisture level. Behind every step is an ongoing process of experimentation and learning, with one central question: how can microorganisms from our own origin help create a distinctive new identity for Thai coffee?

Juicy Lychee follows, bringing a soft sweetness and transparent fruitiness before Salak introduces a distinctive sweet-tart complexity. As the cup develops, Strawberry brings a softer ripe-fruit sweetness, while Pink Guava adds a refreshing acidity with a recognizable tropical character. Thailand Green Coffee Competition 2026 (THGCC 2026) is a platform created to give Thai coffees, growing regions, and producers from across the country the opportunity to showcase their potential through a structured quality evaluation. With Kru Oh — Anuwat Kobnampetch and SOCOF Coffee Education System working behind the competition, THGCC has become a space for knowledge exchange, learning, and the continued development of Thai coffee quality. One of the standout coffees from this year’s competition comes from Slowna Coffee Farm, earning RANK 3 in the Arabica category with an impressive score of 90.95 — making it one of the top-ranked Thai coffees at THGCC 2026. 🥉🇹🇭

⛰️ This lot comes from Slowna Coffee Farm in Doi Phu Kha, Pua District, Nan, Thailand, produced by Pornpiphat Sansan at an elevation of approximately 1,200–1,500 masl. What makes this coffee especially interesting is not only its origin, but also the processing concept used to build its character. The Syrina variety is Co-Fermented with Gesha Cherry Pulp before undergoing an Anaerobic Washed Process.

From the highlands of Maneepruek in Nan, Thailand, an origin shaped by its distinctive mountain environment, Java De Hmong is grown at approximately 1,400–1,500 masl. The coffee undergoes a Natural Process, allowing the beans to develop alongside the fruit and mucilage throughout the drying stage. The result is a Thai coffee with a Fresh & Floral, Colorful & Fruity character — bright, aromatic, expressive, and full of details that make every sip enjoyable. 🌿

🌱 At the heart of this coffee is the Java variety, an intriguing cultivar that expresses a distinctive personality when grown at high elevations in Thailand. The name “De Hmong” also connects this coffee directly to Maneepruek, a mountainous coffee-growing community in Nan. Together, the variety, origin, and Natural Process create a coffee with a strong sense of place, while allowing its natural sweetness, aromatic qualities, and fruit-driven character to shine clearly in the cup.

This exceptional lot comes from Gem Forest Coffee, cared for by farmers Kaleb & Saa Jordan, who are exploring the potential of Gesha grown in Thailand at an elevation of 1,470–1,500 masl. What makes Gem Forest especially fascinating goes beyond cultivating a variety renowned for its distinctive aroma and flavor. The farm also experiments with and develops post-harvest techniques to discover new ways of expressing the character and potential of Thai-grown coffee. ✨

🎼 COLD FERMENTATION WITH MUSIC

At the heart of this lot is an experimental processing concept that brings together temperature, time, fermentation conditions, and sound under the idea of Fermentation + Sound = Flavor Innovation.

Fermentation is controlled at a low temperature of approximately 15°C, allowing the process to progress more slowly and giving more time for complex aromatic and flavor characteristics to develop.

🎻 Classical Music | Every 3 Hours
Classical music is played at intervals every three hours, drawing inspiration from the concept of Bioacoustics. In this approach, sound is considered as a form of gentle vibration, exploring the potential role that vibration may have on the fermentation environment and microbial activity.
