Making sweetenend sticky rice is such a task full of techniques. I found there is no short cut and just one of the menu that every single step counts if you want the professional result. From choosing the rice (age, variety) , cooking it (well again depend on the rice), a container that use to make the sticky rice with sweetened coconut milk and even the temperature of the rice and the syrup itself... But believe me once you got it right it is all worth it at the end 😋

My ideal Khao Nhiew Moon is soft but not mushy , you can feel each grain, no sticking to each other even though it's called sticky rice... And yess the balance of sweetness and salty (more sweet than salty of course)::: as a big fan I can go on and on about it.

Today we make sweetened sticky rice that has been infused with pandan and steamed egg custard along with shrimp and coconut topping.
It's been raining all day here in Bangkok and such a perfect day to do this... Might be a lot of techniques and a bit of time consuming but other than that it's so rewarding once the final result is revealed 👍👍👍
