Learn art of baking with master French chef
Chef Fabrice is a teacher worldwide experience with Cordon-bleu Korea & Bangkok, USA, Canada, ASIA, Dubai, Philippine
Our school teaches 1 day to 5-day intensive pastry, bakery & cuisine. All levels are welcome to joint.
The class is done in English, but all class had a qualified translator.
We have customized class for private workshop and group class 6 student maximum.
1 day class available from 9 am to 5pm
2-day class for sourdough from 9am to 5pm
3-day class for bakery croissant class from 9am to 5 pm
5-day intensive class from 9 am to 5 pm
Course detail:
1 day class have many workshops to choose from, famous lemon from Cedric Grolet, best chocolate tart from Amaury Guichon, macaron, chocolate decoration, beef wellington, mille feuille, Italian cuisine, French cuisine.
2- day will teach you all the secret of sourdough, French baguette, how to make a starter, focaccia, pretzel, bagel, rye bread, long and short fermentation. All the bread is made in the traditional way and can be made from home.
3- day bakery will teach you the technical of croissant dough, brioche, puff pastry, brioche feuilettée, scone, all the filling as pastry cream, almond cream, lemon cremeux, jam, fruit jelly. You make your own lamination and roll your croissant. Making over 14 recipes and over 30 different items
5- day will cover 40 hours of intensive pastry and bakery, will cover most of the recipe that are used in professional shop. You will learn to make tarts, éclair, mille feuille, Canelle, madeleine, scone, sponge and biscuit, croissant, French baguette, brioche, chocolate mousse cake, Fraisier, chocolate bonbon…
This course will help you to open you own cafe or bakery shop. Also get professional support from the chef when is needed.
