Big announcement! I am back in my chefโs jackets! Delighted to announce that I have joined Creative Culinaire Academy as full-time instructor.
In fact, this is a welcome return for me. I first worked with Creative Culinaire in 2006! Chef Judy has been a mentor and inspiration to me ever since! I am grateful for the opportunity to share my knowledge with more students.

Pumpkin bread made in class today. Love the colour and texture of the bread, but need to fine tune the shaping and flavour. Not bad for a first try.

Brioche made in class today! Just give me a cup of coffee and couple thick slices of freshly baked brioche, and I am a happy woman!

200g Bread Flour
50g Wholemeal Flour
50g Instant Oats
6g Salt
225g Water
60g Starter
Multigrain topping
12 hours start to finish.
