Simple ButterCake for your quick baking. Approx 90mins from start to end(includes washing + preparation of ingredients(excludes buying of ingredients + cooling down))
The Recipe:-
Part A
250gm Slightly Salted Butter
250gm Fine Grain Sugar
1 tsp Vanilla Extract/Essence
Mix and Beat ingredients in Part A until it is fluffy and most of the sugar is dissolved.
Part B
6 Whole Eggs(Between 60gm to 63gm per egg with shell)
Mix Part B to Part A one at a time while beating add slow to mid speed.
Part C
250gm All Purpose Flour(unbleached)
1 tsp Baking Powder
Mix the dry ingredients in thereafter.
Part D
50ml/g Sour Cream/ Full Fat Fresh Milk
Finally add Part D for the final touch and mix till it is well incorporated.
Part E
Place the batter into a loaf pan approx 9” by 3.5” by 3” or 5” by 5” by 3”for a higher height cake and level the surface. Ensure to give it a few taps to release trapped air prior to putting it in the oven.
Part F
Bake it in a preheated(160 degree Celcius for about 15mins) oven at 160 degrees Celcius for about 50mins to 60mins or until clean skewer test is achieved. (I used the second lowest rack to bake this cake)

Story behind this marinated chicken. Established in UK. When i was studying in the UK, eating out was expensive. Hence, had to sometimes depend on own cooking or housemate’s generous cookings(🙏🏻🙏🏻). First was to get the right spice combination, thereafter struggled with its proportion - sometimes it was good sometimes it was overpowering. When all things were right, and after graduation, coming back to Singapore for good, it was challenging to find the exact same spice back in the UK. And.. after years of hunting, managed to get the taste of the chicken marination just like in UK. As some of you have tried the chicken during classes, and the feedback received was consistent, decided to put it on the market at SGD 23/kg for you to try. Pandan Gula Melaka Tapak Kuda(Horse Shoe Cake). Again no cake stabiliser was used when making this cake. You can simply taste the flavour similar of that kueh ondeh ondeh; hint of the refreshing coconut cream topped with diced gula melaka and the star of this cake goes to…. pandan extract/juice. Enjoy!

Flawless and neat. Splendid Lapis baking by participants. 👏🏻👏🏻Most of them, if not all, who came, have not had prior experience in baking Lapis. This was the result of their bakes. I must say it was a job well done. 👍🏻👍🏻One of the participants was kind enough to let the rest have some of her baked Lapis for comments. And..it was moist, the texture was controlled, and the Lapis Spice made the cake flavourful. As shared, Lapis Spice, in my opinion, as it continues to develop more flavor after baking, is best eaten on the third day. Just in time for Cny, and it would be delightful to share some of this rich cake with family and friends. Enjoy! #
