Heiraz started from humble beginnings, seriously – the ones you may happen to read about kitchen start-ups. What started from home, then moved to a coffeeshop stall, then to a small and cozy little room we candidly called “Baking Studio” and then to the Eastern and Northern parts of Singapore. [BLUEBERRY CHEESECAKE]
Shortbread pastry(Base)
100gm plain flour
60gm unsalted butter
10gm groundnuts
30gm icing sugar
1/4 tsp salt

[Fillings]
490gm Soft Cream cheese (room temperature)
140gm sugar
2eggs (120gm with shell)
140gm heavy cream
1 strip vanilla pod/1 tsp vanilla flavor
Blueberry jam for the toppings

METHOD:-

1. Preheat oven at 170 degrees celcious
2. Combine flour,buttericing sugar salt and groundground almonds in a bowl.
Rub in method.
Incorporate the eggs ,mixed with wooden spatula.
3. Rest the dough for 15 mins.
4. Dust the flour onto the parchment paper ,roll out the dough 4mm.
5.Use 6inches round spring fold mould .
Bake for 15 mins till golden brown.

Fillings
Preheat the oven 90 degrees
1.Mix the soft Cream Cheese with sugar using a hand whisk.
2.Mix till you don't feel the greasing of the sugar.
3.Add in the eggs one at a time.
Then the cream last but not least add in vanilla essence/pod.
4.Pour into the spring form pan steam bake for 45-1hour 15 mins.
Take note from this recipes you can create your own flavors.
