Friday lunch was a healthy baked omelette with onion, potatoes and turmeric with a puree of spinach and fresh salad!

Cooking in oven is healthier because less oil is used, and for the omelette to be successful, the potatoes must be boiled for 10 minutes in advance!

Today brown rice salad with vegetables: leeks, broccoli, carrots, datterini tomatoes, peas, peppers, black olives and avocado with hard-boiled eggs!

I cooked the vegetables cut into small pieces in the oven to use less oil and have healthier food, the rice must cool after cooking and then add the vegetables, stirring gently and only at the end add the tomatoes and avocado.

Drizzle with olive oil and oregano ! ☺️

Today to start the week with the right energy…. handmade meatballs with potatoes and tomato sauce (and of course also the veg version)!

For a kilo of minced meat I put 4/5 slices of bread, a large onion, 3/4 tablespoons of vegetable cream (if you are not allergic you can also use cream and add 100 gr of Parmesan cheese) 2 eggs and a little breadcrumbs . Salt, pepper and a little coriander seed powder!

I first bake the meatballs in the oven for 15 minutes so they release the oil and I don't put it in the tomato sauce in order to have a healthier and lighter food.

For the tomato sauce, I fry the finely chopped onion in olive oil, first boil the cut potatoes for 10 minutes in water and then add them to the sauce and cook for an hour.

Then I combine everything and cook for another 20 minutes and it is ready to eat !!

Friday is always a special day! Today vegokorv with baked potatoes, sweet potatoes and onion and homemade mayonnaise! Because mayo is good but handmade is better !! 🙂

Do you want to try? It's very easy: put an egg (not cold, leave it out of the fridge for half an hour) in the glass of the hand blender then add 200 ml of seed oil, a pinch of salt and a teaspoon of vinegar or lemon juice.

With the hand blender resting on the bottom, start whipping without ever detaching it from the bottom for five minutes and as soon as you see it thickens, start lifting it and moving it from the bottom up until it is completely dense! Done!

Ps if you boil the potatoes for 5 minutes before cooking them in the oven they will be more crunchy on the outside and creamy on the inside! ☺️
