For hundreds of years, Romanian life revolved around animals and nature. If you grew it or you raised it, you ate it. We are now one click away from our groceries, but our ancestors had to make sure they had enough supplies for the entire year, and they had to go through a lot of hard work and sweat to make that happen.
It was a hard life, but happy, fulfilling. People were one with Nature and they treated Nature with fear and respect.
Nowadays, these old traditions are fading, disappearing.
Luckily, we can still find them in the remote corners of the Carpathian mountains, in the heart of Transylvania.
One of our greatest joy is visiting a sheepfold in the summer, and listen to the shepherd’s stories. How they take care of their animals, how they fight with wolves and bears, how they get but a few hours of sleep at night, and do it all over the next day.
Here, time goes by at a different pace. There are no tasks and deadlines, there are only things that need to be done.
It is a mesmerizing process to see the milk transform into the much valued cheese, cheese that will feed others throughout the winter. Nothing is wasted, the milk provides 2-3 products, and what is left will feed the dogs with good nutrients, making them strong enough to fend off any predators.
Once you are here, you just can’t help but taste anything they put in front of you: the fresh cheese or ricotta, the bacon that gets slowly smoked over the fold’s fire, the special soups that you can only eat here. Everyone should try this from time to time, to realize how processed our daily food really is. This food, combined with the clean air, is health!
