What research tools are worth using today to study consumer behaviour? 🧠📊

There’s no one-size-fits-all method – says Dr Davide Giacalone, Associate Professor at the University of Southern Denmark.

Consumer research is a field where it’s worth combining different approaches and techniques, depending on the stage of product development and the specific research questions.

👉 Sometimes, classic methods such as interviews or focus groups are enough.
👉 Other times, modern solutions like online data analysis or quantitative tools to measure responses to specific formulations prove useful.

Tastes differ – and that matters! 🍽️

Why is consumer diversity so crucial in sensory and consumer research?

Dr Davide Giacalone, Associate Professor at the University of Southern Denmark, explains how our taste, smell, and texture perceptions are shaped not just by biology, but also by habits and personality traits.

From SEASONED to the future – uniting sensory scientists in Poland ✨

“The team is the most important” – with these words, Prof. Agnieszka Kita summed up the value of the collaboration built throughout the SEASONED project.

In Wrocław, new skills and initiatives have emerged – and so have strong foundations for the future of sensory science in Poland. One of the key outcomes of the project is the establishment of the Food Sensory Analysis Section within the Polish Food Technologists’ Society, alongside active efforts to bring the national sensory science community closer together.

SEASONED is only the beginning – now it’s time for the next joint steps! 💪

Collaboration that bridges gaps – including between science and industry.

Prof. Agnieszka Kita, SEASONED project coordinator, reflects on the importance of building a strong network and working together throughout the project – no matter the distance or differences.

We started like students – supported by fantastic mentors. Today, almost three years later, we have a trained sensory panel, local experts and real experience in cross-sector collaboration.

It wasn’t always easy – but it brought lasting results ✨\

👉 How to create a product that truly meets consumer expectations?

“We start with sensory,” says Prof. Agnieszka Kita, coordinator of the SEASONED project.
Without proper sensory analysis and consumer research, it’s impossible to understand what people really want. And that’s essential if we want to design something that’s not only innovative but also… tastes good.

SEASONED proves that flavour is not an afterthought – it’s the starting point.
