ایک ہی پیاز کے چھوٹے اور بڑے ٹکڑے کرنے پر اس کا ذائقہ مختلف ہو سکتا ہے، اور اس کی وجہ پیاز کے اندر موجود *اینزائمز* اور *کیمیائی ردعمل* ہیں۔

اینزائمز اور کیمیائی ردعمل
پیاز میں ایک اینزائم ہوتا ہے جسے *اینیزائن* (alliinase) کہتے ہیں۔ جب پیاز کے خلیے کٹتے ہیں یا ٹوٹتے ہیں، تو یہ اینزائم *سلفورک کمپاؤنڈز* پیدا کرتا ہے، جن کی وجہ سے پیاز کا مخصوص *تیز اور تیکھا ذائقہ* ہوتا ہے۔ اگر پیاز کے ٹکڑے زیادہ چھوٹے ہوں گے، تو اینزائم زیادہ فعال ہو گا اور تیز ذائقہ زیادہ شدت سے محسوس ہوگا۔ اس کے برعکس، اگر پیاز کے ٹکڑے بڑے ہوں، تو اینزائمز کا ردعمل کم ہو گا اور ذائقہ اتنا تیز نہیں ہوگا۔

سیلز کی مقدار
پیاز کے چھوٹے ٹکڑے کرنے پر زیادہ خلیے ٹوٹتے ہیں، اور اینزائمز زیادہ مقدار میں سلفورک کمپاؤنڈز پیدا کرتے ہیں جو *تیز، جلن پیدا کرنے والا اور آنکھوں میں پانی لانے والا* ذائقہ پیدا کرتے ہیں۔ اس کا مطلب ہے کہ *چھوٹے ٹکڑوں میں ذائقہ زیادہ تیز اور تیکھا* ہوتا ہے۔

اگر پیاز کے ٹکڑے بڑے ہوں تو کم خلیے ٹوٹیں گے، اس لیے *ذائقہ زیادہ نرم اور کم تیز* ہوگا۔

پکانے کا اثر
جب پیاز کو پکایا جاتا ہے، تو سلفورک کمپاؤنڈز جزوی طور پر تبخیر ہو جاتے ہیں اور پیاز کا ذائقہ *مٹھاس کی طرف بدل جاتا ہے*۔ اس لیے اگر پیاز کو چھوٹے ٹکڑوں میں کاٹا جائے اور پھر پکایا جائے، تو اس کا ذائقہ زیادہ *میٹھا اور نرم* ہو گا کیونکہ زیادہ سلفورک کمپاؤنڈز ختم ہو جائیں گے۔

FOR BACHELORS
The scholarship will cover a Bachelors’s degree at any HEC-recognized university of Pakistan in one of the following subject areas:
Education
Sustainable Energy
Food Security and Agriculture
Health Sciences
FOR MASTERS/ MPHIL
The scholarship will cover a Master’s degree at any HEC-recognized university of Pakistan in one of the following subject areas:
Education
Sustainable Energy
Food Security and Agriculture
Health Sciences
STEM (Science, Technology, Engineering, & Mathematics)

ELIGIBILITY
The following criteria must be met to be considered eligible for the scholarship:
Only female applicants can apply
These scholarships are open to female applicants only. In addition, applicants must:
Be Pakistani nationals currently residing in Pakistan
Be pursuing a four-year bachelor’s degree or two year master’s degree in the above listed subject areas
Hold a confirmed admission offer from HEC recognised university in Pakistan
*** For masters/MPhil degree, you must be enrolled or have an admission letter from any university in Pakistan. Currently enrolled students can also apply. For example, even if you have started second years of masters, you can apply
For Bachelors students, you must be enrolled or have admission letter/ acceptance letter from any Pakistani university. Currently enrolled students can also apply. For example, even if you have started second year or third or fourth year of bachelors, you can apply
Young women with disabilities, from rural areas and/or minority groups are encouraged to apply.
** For Bachelor's and Masters Degree, you must be studying or have admission offer in only any HEC recognized University in Pakistan.

THE AWARD
Pakistan Scottish Scholarship Scheme will facilitate award-holders with the following:
Tuition fees for Bachelors or Master’s courses
University hostel costs
Subsistence to the award holder
Travel to and from home to university two times a year for students staying in on-campus hostels
