Recipe:
1. Add 1 tbsp ghee in a frying pan.
2. Crackle 2 green cardamoms (sabz ilaichi).
3. Add 1 ½ cups of crushed vermicelli (sawaiyan).
4. Cook it golden and set aside.
5. Boil 2 liters of milk (doodh).
6. Add a pinch of zardai rang and 250 gms of khoya.
7. Cook for 3 minutes over low heat.
8. Add 1 cup of sugar (cheeni).
9. Add sawaiyan and cook over low heat with lid on for 5-8 minutes.
10. Add some chopped pistachio and mix.
11. Garnish with remaining chopped pistachio.
12. Can be served hot or chilled.

Recipe:
1. Heat 2 tbsp oil in a frying pan and fry 250 gms of cottage cheese (paneer) in cubes.
2. Fry it golden brown.
3. Transfer cheese to hot water. This way the cheese stays soft.
4. Heat 2 tbsp of oil and add 2 medium size sliced onions (piyaz).
5. Fry onions until they turn pink to golden brown then take it out.
6. In a blender, add fried onion, 2 big tomatoes and 10 almonds then blend in 1⁄2 cup of water and set this paste aside.
7. Heat ½ cup of oil in the same pan and add 1 tbsp ginger/garlic (lehsan adrak paste).
8. Add 1 tsp kashmiri laal mirch, 1 tsp red chilli (laal mirch) powder, 1 tsp coriander (dhania) powder, ½ tsp garam masala powder, 1 tsp salt and 1 tsp cumin (zeera) powder.
9. Cook for 2 minutes.
10. Add blended paste and stir.
11. Cook for 5 minutes with the lid on.
12. When oil separates, add 1 ½ cup peas (matar) and mix.
13. Add 1 cup of water.
14. Cook until peas become soft (around 10-12 minutes).
15. Add 3 tbsp cream and mix. (Optional)
16. Strain the soaked cottage cheese and add it to the pan.
17. Add 1 tsp crushed dried fenugreek leaves (kasuri methi) and 2 chopped green chillies.
18. Simmer over low heat for 3-5 minutes.
19. Serve with naan.

Recipe:
1. Chop 1 kg summer squash (chappan kaddu).
2. Heat ¼ cup of mustard oil (sarsun ka teil).
3. Add 1 tsp cumin seeds (zeera).
4. Add 1 tbsp ginger/garlic (lehsan adrak) paste.
5. Saute for a minute.
6. Add 1 medium size sliced onion (piyaz) and cook it light golden.
7. Add peeled/chopped summer squash (chappan kaddu).
8. Add 1 tsp turmeric (haldi) powder, 1 ½ tsp salt and ½ tsp red chilli (laal mirch) powder.
9. Add 3-4 chopped tomatoes.
10. Cook over medium heat with lid on.
11. Kaddu will release its water so there is no need to add extra water.
12. When kaddu becomes soft, mash them with the spoon.
13. Add 3-4 green chillies (hari mirch).
14. Simmer over low heat for 3 minutes.
15. Serve with roti.

Recipe:
1. Boil 1 big potato (aloo).
2. Let it cool down then mash it in a bowl.
3. Add ¼ tsp red chilli (laal mirch) powder, ¼ tsp chaat masala, ½ tsp cumin (zeera) powder and 2 tbsp tamarind pulp (imli ka goada) and mix.
4. Make cut on 6 big green chillies and deseed them.
5. Stuff chillies with potato mixture.
6. In a bowl, add 1 cup chickpea flour (baisan).
7. Add ½ tsp salt and mix .
8. Add ¾ cups of water gradually, making paste with little thick consistency.
9. Dip chillies in baisan one by one and fry them golden brown.
10. Serve with imli ki chatni.

Recipe:
1. Peel off 2 bottle gourd (lauki).
2. Grate (kadukash) lauki.
3. Boil water in a pan and cook lauki for 5 minutes.
4. Strain it and let it cool down.
5. Whisk ½ kg yogurt (dahi) in a pan.
(Yogurt will not be cooked)
6. Add 1 tsp salt, ½ tsp red chilli (laal mirch) powder and ½ tsp red chilli flakes (kutti laal mirch).
7. Add ½ bunch mint leaves (podina), ½ bunch coriander leaves (hara dhaniya) and 4 chopped green chillies.
8. Mix ingredients in the yogurt.
9. Add ½ cup water and mix.
10. Add bottle gourd (lauki) and mix.
11. More water can be added for a desired consistency like ½ cup of water.
Tarka:
12. Heat 4 tbsp oil in a frying pan.
13. Add 1 tsp cumin seeds (zeera), 3 whole red chillies (sabit laal mirch), slices of 5 cloves of garlic and 5-6 curry leaves.
14. Pour tarka over raita.
15. Serve with boiled rice.

Recipe:
1. Cut ½ kg boneless chicken in strips.
2. Marinate chicken in 3 tbsp tandoori masala, 3 tbsp chicken tikka masala and 1 tbsp ginger/garlic (lehsan adrak) paste.
3. Heat 3 tbsp oil in a pan.
4. Cook marinated chicken with ½ cup of water (pani) over medium heat.
5. Stir after 5 minutes.
6. When water dries and oil separates, turn off the flame.
7. Let the chicken cool down completely.
8. Dissolve 4 tbsp flour (maida) in ¼ cup of water and keep it aside.
9. Spread roll sheet and cut it in 2 halves.
10. Make cuts at the end part of the sheets.
11. Place chicken above the edge of the roll sheet.
12. Apply flour paste then fold the top and sides gently.
13. Mentioned quantity makes 17 chicken strings.
14. Deep fry chicken strings over low heat to make them crispier longer.
Dahi Bhallay | Street Style Lahori Dahi Bhallay | Besan Dahi Bhalla Recipe By Happy Cooking Mashup
Recipe:
1. Take 3 cups of split chickpeas (besan) in a mixing bowl.
2. Add ½ tsp salt, 1 tsp cumin (zeera) powder and 1 tsp baking soda.
3. Mix.
4. Add 2.5 cups of water (pani) gradually whisking.
5. Whisk until a smooth texture.
6. Rest it for 30 minutes and whisk again before frying.
7. Heat oil then set the flame to low.
8. Make bhallay by dropping mixture in the oil with the spoon. Keep the spoon straight upward while dropping the mixture..
9. Fry them over low heat until they become brown and crispy.
10. Mentioned quantity makes 28 bhallay.
11. Transfer them in plastic bags and freeze to be used when required.
(Can be frozen for up to 2 months).
12. Soak bhallay in water for 1 hour.
13. Squeeze water by pressing bhallay between your palms. (using 6 bhallas).
14. Take 250 gms yogurt (dahi) in a bowl and add 3 tbsp sugar.
15. Whisk until mixture becomes smooth.
16. Add ½ cup milk for a good consistency.
17. Place bhallas in a dish.
18. Pour yogurt mixture.
19. Top with sweet imli chatni and dahi bara masala.
20. Serve with papri.

Recipe:
1. In a frying pan, add 10-12 whole red chillies (sabit laal/gol mirch), 2 tbsp coriander (dhania) seeds, 1 tsp carom (ajwaien) seeds, 1 tbsp cumin (zeera) seeds.
2. Roast them over low heat for 2-3 minutes.
3. Turn off the flame and let it cool down at a room temperature.
4. Transfer it into a grinder.
5. Add ½ tsp black salt (kala namak), ½ tsp salt, and ¼ tsp citric acid (tatri) powder.
6. Coarsely grind them.
7. Store it in an airtight container.

Recipe:
1. Wash and soak 1 ½ cups of moong dal for 2 hours.
2. Transfer dal in a chopper and make a coarsely mixture (dardara).
3. Chop 3 medium size onion, 6-7 green chillies (hari mirch) and 1 bunch of coriander leaves (hara dhania).
4. Transfer dal, onions, green chillies and coriander leaves in a bowl.
5. Add 4 tbsp gram flour (baisan), ½ tsp baking soda, 1 ½ tsp salt, 1 tsp red chilli powder, ½ tsp turmeric (haldi) powder, 1 tsp coriander (dhania) powder, 1 tsp cumin (zeera) powder and ¼ tsp carom seeds (ajwaien).
6. Mix all the ingredients.
7. Fry pakoras over medium heat.
8. Serve with imli chatni.

Recipe:
1. Cut ½ kg boneless chicken in thin strips.
2. Cut 2 big capsicums (Shimla mirch) in julienne, Grate 1 small cauliflower (band gobhi) and 1 big carrot (gajar).
3. Heat 3 tbsp oil in a wok or wide pan.
4. Add 1 tbsp ginger/garlic (lehsan adrak) paste and sauté for a minute.
5. Add 1 sliced onion (piyaz) and cook it until it turns transparent.
6. Add chicken, carrot, capsicums and cauliflower.
7. Add 2 tbsp vinegar (sirka), 2 tbsp soya sauce, 1 tsp salt, 1 ½ tsp sugar and 1 tsp black pepper (kali mirch) powder.
8. Fry for around 5 minutes over medium high flame until the mixture becomes dry and chicken is cooked.
9. Add 1 tsp sesame oil (til ka teil) and mix.
10. Dish out and let it cool over room temperature.
11. Method : 1 Spread roll bread (roll ki patti) and place filling (2-3 tbsp spoons) above the edge and fold.
12. Method : 2 Spread roll bread (roll ki patti) and place filling (2-3 tbsp spoons) in the center and fold.
13. Seal the edges of bread with flour (maida) and water mixture (1/4 cup water and 4 tbsp flour).
14. The mentioned quantity makes 12 rolls.
15. Deep fry rolls in a wok or frying pan over low heat so they stay crispy longer.

1. Boil 1 cup milk (doodh).
2. Dissolve 2 tbsp custard powder in ½ cup water.
3. Add it to the milk gradually while stirring.
4. Add 2 tbsp sugar (cheeni)
5. Let it cool down for 15 minutes.
6. Beat 2 eggs (anday) in a wider dish.
7. Add 2 tbsp sugar (cheeni), 1 cup milk and ½ tsp vanilla essence.
8. Whisk all.
9. Melt 1 tbsp butter (makhan) in a frying pan.
10. Dip bread in egg mixture and cook until the slice turns golden brown.
11. Flip the side and cook the slice golden brown.
12. Spread custard on French toast and sprinkle some crushed almonds and cashews.
13. Place the other French toast over it.
14. Top it with cream and dust some icing sugar.
15. Garnish with some crushed almonds and cashews.
16. Decorate with strawberries.

4. Add 4 whole red chillies (sabit gol mirch) and 4 green chillies (hari mirch) in strips.
5. Cook for a minute.
6. Add 2 tbsp soya sauce, 3 tbsp chilli garlic sauce, ½ tsp black pepper (kali mirch) powder and 1 tsp salt or as per taste.
7. Cook over high heat for 2 minutes.
8. When the mixture becomes dry, add 2 cups of chicken stock (murghi ki yakhni) and give it a boil.
9. Dissolve 2 tbsp cornflour in ½ cup water.
10. Add it gradually and cook until it thickens.
11. Turn off the flame and add 2 tbsp honey (shehed).
12. Mix and garnish with spring onion (hari piyaz).
13. Serve with fried rice.
