If you want some carbs in it, I suggest using whole wheat like Atta Flour which you can buy online.
I first used Atta flour way back 2012 when I discovered it in a store (Patel) in New Jersey.
It's shelf stable and has a delicious nutty flavor full of fiber. Also you are sure that you're getting real whole wheat not whole wheat plus white flour that most stores online sell.
Another super carb with HIGH amounts of protein is Quinoa, which can be used with almost anything baked and rice dishes. Just grind it in your coffee grinder or Nutribullet and add it in your dry ingredients.
Don't forget to flavor the crackers with spices and a tad bit of Pink Himalayan salt for flavor.

Too bad I can't teach these days, its like a prolonged vacation somewhere like when I first went to NY last 2010.
Hoping to re open this coming March and summer with very limited students. 3 at the most to observe the social distancing. I also have a separate CR exclusively for the students and me.
Also by May, I'm opening a 2 room BnB (with kitchen), its beside my baking school/bakery...with strict adherence to the guidelines of the DOH of course. So if you need a room to rent for a short stay in QC...ring me up.

Kimchi Pancake served on black rice. My favorite. Use fermented kimchi on this one. Super yummy.

Customized no sugar no fat bread. Perfect for diabetics. I will make one with brown rice flour but need to make some time for it since grinding the rice is a huge task.

Biggest tip I can give is to be patient. Baking bread is about timing, about making time to make the bread and waiting for the right time to:
Develop the gluten
Proofing to the right size
And the baking it when it is ready.
That makes one absolutely excellent loaf.
