"KINILAW: HEIRLOOMS OF DAVAO"

Kinilaw: Heirlooms of Davao reimagines a timeless Filipino dish by blending tradition with bold innovation. Rooted in one of the country’s oldest culinary practices, it “cooks” fresh yellowfin tuna using natural acids, preserving its purity and connection to the sea.

The dish is elevated with pomelo, whose gentle sweetness and acidity reflect Davao’s rich agricultural heritage. A refined touch of durian adds a creamy, unexpected depth, transforming its bold reputation into something elegant and balanced.

Together, these elements create a harmonious tribute to Davao, where every flavor tells a story of land, sea, and identity.
