Our students experienced a meaningful Brew Tour at Palm Tree Abbey, where they were immersed in the history, process, and service of craft beer. More than a beverage experience, the tour became a lesson in heritage, discipline, hospitality, and craftsmanship.
Did you know?
The long history of abbey brewing is deeply connected to St. Benedict. In the 6th century, the Rule of St. Benedict guided monastic life through the principle of ora et labora—prayer and work. Because monasteries were encouraged to be self-sufficient and to support themselves through honest labor, Benedictine and later Trappist monks across Europe developed skills such as farming, baking, cheese-making, and brewing beer.
Abbey brewing was not simply about producing beer. It reflected the Benedictine values of work, discipline, hospitality, community, self-sufficiency, and charity. Monks brewed to sustain the needs of the abbey, welcome guests, and support charitable works beyond the monastery.
Through this immersion, students witnessed the actual process of craft beer creation—from ingredients and brewing traditions to service and storytelling. Experiences like this allow future hospitality professionals to understand that every product has a story, every tradition has a purpose, and every service should be rooted in knowledge, respect, and responsibility.
At St. Scholastica’s College Manila, learning goes beyond the classroom. We form students who are skilled, culturally grounded, service-oriented, and guided by Benedictine values.
