MMSU-CIT Culinary Team clinches 2nd Place at IFICC 2026 cooking tilt
By Fatima Anntonette Galacinao
The College of Industrial Technology (CIT) once again showcased its culinary excellence, securing 2nd place in the Ilokano Food Innovation Cookfest Competition 2026 held on April 22, 2026, at the Mariano Marcos State Universityโs Food Innovation Center.
Anchored on the theme โIntensifying Cultural Heritage Through Innovative Ilocano Cuisine,โ the competition gathered talented student chefs who reimagined traditional Ilocano dishes through modern culinary techniques. The CIT culinary team, composed of Cherie Joy R. Layaoen of FPSM-3B and Christian Dave Bagaoisan of FPSM-3C, under the guidance of Mrs. Jherie-Mae P. Respicio, delivered an outstanding performance that earned them recognition from the panel of judges.
The team presented a well-curated three-course menu that highlighted both innovation and cultural authenticity. Each plate carried a sense of placeโrooted in tradition yet reimagined with contemporary flair. The appetizer, Kuros Bite, offered a balanced blend of coastal and upland flavors, combining creamy and crisp elements in a refined bite. At the heart of their menu was the main dish, 'Imbaliktad' with Marrow Reduction, which stood out with its rich marrow sauce and subtle acidity, an embodiment of how heritage cuisine can evolve without losing its soul. Completing their lineup, the dessert, 'BalaThick,' delivered a smooth and comforting finish, highlighting familiar flavors elevated through technique.
Throughout the competition, participants demonstrated not only technical proficiency but also a deep appreciation for Ilocano culinary heritage. The event served as a platform for young culinarians to explore creativity while preserving traditional flavors.
With their remarkable achievement, the young chefs continue to exemplify the talent and dedication of CIT students in the field of food innovation. Their success highlights the importance of nurturing culinary skills that both honor tradition and embrace modern advancements.
Further, IFICC 2026 stands as a celebration of culture, creativity, and excellenceโfurther strengthening the role of future chefs in promoting and innovating Ilocano cuisine.

A few more strides and you are almost there. Just a pinch more time for reviews, defenses, and editing, and you will just be a step before the finish line.
Yes, dreams really test our patience and courageโbut just like gold that undergoes tests under fire, you are being refined to shine, being molded into your most promising quality.
You are near the turning of your tassel and close to going up the stage. Good luck with the last remaining steps to success.

In the closing remarks, Prof. Fairie Anne Domingo, Department Chair of Industrial Technology, emphasized that while the outputs presented are ideas, what participants should take home is a roadmapโhighlighting that these should not remain solely as research presentations but must be further developed, adapted into technology, and serve as a catalyst for continued innovation.
Throughout its duration, the event underscored the institutionโs commitment to academic excellence, innovation, and the development of industry-ready graduates.
