On the 128th anniversary of his birth, we honor a visionary whose dedication to education and service continues to shape the future of maritime professionals. Through his unwavering commitment, John B. Lacson Foundation Maritime University was born as the countryโ€™s first private maritime education and training institution, empowering generations to serve God, country, and the maritime industry with discipline, integrity, and excellence.

As we reflect on his vision, we also echo the values that have been passed down to every Lacsonian: discipline, progress, and leadership. These values, ingrained in us, are what made us the best of men, as the JBLFMU March says:

In every successful dish is a story of patience, discipline, and heart. For Chef JV Victoriano, that story began at JBLFMU-Molo, where dreams were sharpened, character was strengthened, and passion for the culinary field found its direction.

Chef JV belongs to one of the first few batches who graduated from the BS CSM Program of JBLFMU-Molo. As one of its early graduates, this featured Lacsonian helped pave the way for the programโ€™s growing name in hospitality and culinary education. This journey reflects how the University, already known as a formidable institution, continues to produce graduates who carry discipline, skill, and excellence into their chosen fields. Coming from Mindanao, Chef JV was also drawn to the culture of the Ilonggos and the quality education offered by John B. Molo, believing that it was the right place to prepare for a meaningful future in the culinary field.

Student life was filled with challenges, growth, and meaningful experiences. This culinary professional describes the Lacsonian years as demanding yet fulfilling, where academic learning, hands-on training, and personal development worked together in shaping work ethic, creativity, and resilience. Compared to high school life, college became more enjoyable and memorable, with every challenge serving as part of the journey toward becoming a better version of oneself.

Among the experiences that left a lasting mark were culinary demonstrations and competitions, internships and on-the-job training, school events, collaborations, and involvement in the Peer Facilitating Program. These opportunities helped build confidence, leadership, teamwork, and real-world exposure. They also strengthened Chef JVโ€™s passion for the culinary craft and taught lessons that could not be learned from books alone.

For our featured Lacsonian graduate, the Lacsonian Core Value that speaks strongly to this journey is Excellence. In the culinary world, excellence is seen in consistency, discipline, presentation, service, and the courage to give oneโ€™s best every single day. This chef-entrepreneur carries this value in restaurant operations by ensuring quality in taste, customer service, and overall dining experience. Discipline, for Chef JV, remains one of the keys to achieving oneโ€™s goals and dreams.

This culinary professional also faced anxieties before entering the industry. There were concerns about meeting professional standards, handling pressure in fast-paced kitchens, dealing with different personalities, and proving oneself in a competitive field. However, instead of allowing fear to become a limitation, Chef JV used it as motivation to work harder and continue improving.

Early in the career journey, one of the greatest challenges was managing time and maintaining consistency during peak service hours. The pressure of the kitchen tested focus and endurance, but Lacsonian training in discipline, organization, and professionalism helped Chef JV overcome these difficulties. With time, workflow improved, composure under pressure developed, and quality service remained a priority even during demanding situations.

Today, Chef JV continues to make a mark in the culinary industry as a celebrity chef, chef-entrepreneur, and restaurateur. Chef JV is the owner and operator of Daveโ€™s Restaurant, affiliated with Elynnas Cafรฉ, and the owner of Jeval Beau Restaurant. This proud Lacsonian has also appeared in various national television shows for cooking exhibitions, conducted successful baking and culinary demonstration classes, developed signature menu offerings, created themed dining events, and built a growing brand recognized for quality and service.

Chef JV credits John B. Molo for providing a strong foundation in culinary techniques, food safety, professionalism, adaptability, and service-oriented work. These lessons prepared this culinary professional for the realities of the hospitality industry and helped shape the chef, business owner, and public culinary personality known today.

As the industry continues to evolve, this Lacsonian encourages students to be aware of emerging trends such as digital marketing, online branding, fusion cuisine, menu innovation, sustainability, locally sourced ingredients, and personalized customer experience. For Chef JV, staying competitive requires continuous learning, creativity, and the willingness to adapt.
