Ingredients:
6 cups peeled yams, cut into ½” to 1” cubes
4 Tbsp. butter, melted
½ tsp. salt
1/8 tsp. pepper

Directions:
Preheat oven to 350°F. Toss the cubed yams and melted butter together and spread the coated cubes onto a parchment-lined cookie or baking sheet. Season with the salt, pepper, SweetLeaf and cinnamon. Bake for 35 minutes or until yams are cooked through and slightly caramelized.

1 cup butter

2 eggs

10 oz. white chocolate chips (or bar cut into chunks)
1 cup macadamia nuts, chopped
Heat oven to 375°F. In large bowl, beat butter, SugarLeaf, vanilla, and salt with electric mixer until creamy. Add eggs, beat well. Stir together flour and the baking soda; gradually add to butter mixture, beating until well blended.
Fold in white chocolate chips and macadamia nuts. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 minutes until edges are golden brown and center is set. Cool slightly then remove from cookie sheet to wire rack to cool completely.

Pumpkin Bread Recipe – made with stevia!
It’s fall, which means that pumpkin season is here! No matter how many pumpkin goodies I make (and eat) each year, I never get tired of the warm, spicy flavor of pumpkin muffins, pumpkin cake, pumpkin lattes, pumpkin pie and my favorite: a spicy-sweet, moist pumpkin bread.
I’m going to share with you the best pumpkin bread recipe I’ve found yet: Spiced Pumpkin Bread from SweetLeaf®’s new cookbook, Cooking with SweetLeaf Stevia®. Made with calorie-free, natural SweetLeaf Stevia® and Pumpkin Spice Sweet Drops™, this bread packs serious pumpkin flavor and is only 180 calories a slice!
Spiced Pumpkin Bread
Ingredients:
2 cups flour
½ tsp. salt
1 tsp. baking soda
½ tsp. baking powder
½ tsp. ground allspice
¾ tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. ground cloves
4 packets SweetLeaf Stevia®
10 drops English Toffee Sweet Drops ™
¼ cup oil
8 oz. (1 cup) canned pumpkin
4 Tbsp. butter
2 eggs
2/3 cup milk
½ cup walnuts or pecans, chopped (optional)
Directions:
Preheat oven to 350°F.
Butter or lightly spray the bottom and sides of a 9” loaf pan with nonstick cooking spray.
Whisk together the flour, salt, baking soda, baking powder, allspice, cinnamon, nutmeg, cloves, and SweetLeaf in a small bowl.
In a separate bowl, combine English Toffee Sweet Drops, oil, pumpkin, butter, eggs, and milk. Stir to combine.
Add wet ingredients to dry ingredients. Stir to combine, and fold in walnuts or pecans, if using. Place in a greased loaf pan and bake for 40 to 45 minutes. Makes 1 large loaf.
